Sweet Potato Turkey Taco Salads
I made these Sweet Potato Turkey Taco Salads as part of my newest Blackstone Griddle Meal Prep Series at my other website, IfYouGiveAGirlAGrill.com.
But I included skillet and air fryer directions in the recipe card so you have a few cooking options to enjoy this healthy meal prep salad.

How to make Sweet Potato Turkey Taco Salads
Start by dicing a large sweet potato, toss it with olive oil, kosher salt, and pepper, and then into the air fryer at 390 for 15 minutes.
Or prep it all at once on the Blackstone griddle.

I cooked up 3 pounds of ground turkey on my griddle to use in several meals, or just cook up a pound in a skillet with some taco seasoning.
The sweet mini peppers were a nice touch in this salad, if you have them I highly recommend.

Pack up your taco meat and cooked sweet potatoes to store in the fridge until ready to assemble your salads.
I got the mini salad kits since I was assembling salads for only myself.

Warm up the taco meat and sweet potatoes to add over the salad.

Also the topping and dressing that comes with the kit.
And optional additions like avocado, the sweet mini peppers, jalapenos, and/or cilantro.

Sweet Potato Turkey Taco Salads
Sweet Potato Turkey Taco Salads is part of my Blackstone griddle meal prep series, or you can make this easy meal in a skillet and air fryer!
Ingredients
- 1 large sweet potato diced, skin on
- olive oil, kosher salt, pepper
- 1 pound ground turkey, chicken or beef
- 1 packet taco seasoning
- 4 (4.3-ounce) bags salad kit of choice (I used Taylor Farms Taco Ranch Salad kits)
- Optional: sweet mini peppers, jalapenos, avocado, and/or fresh cilantro
Instructions

Toss the sweet potatoes with olive oil, kosher salt, and pepper. Place in your air fryer set to 390 degrees for 15 minutes, tossing halfway through.

Preheat your skillet to medium, add the ground meat and taco seasoning packet. Cook 8 to 10 minutes, breaking apart the meat, and add 1/4 cup water halfway through.

Store the sweet potatoes and taco meat in the fridge until ready to assemble the taco salad kits and add toppings of choice such as sweet mini peppers, jalapenos, avocado, and/or fresh cilantro.
Note: I warmed my sweet potatoes and taco meat in the microwave slightly.
