Meal Prep Chicken Enchilada Bowls
This is an easy and healthy recipe to keep you on track throughout the week, it’s Meal Prep Chicken Enchilada Bowls.
You have two choices for the base of these bowls, either cottage cheese or cauliflower rice.
Either way they only take a few minutes to assemble.

How to make Meal Prep Chicken Enchilada Bowls
Start with 4 meal prep containers with lids.
Then add either the cottage cheese or cooked cauliflower rice to the bottom.

I went with cottage cheese for the extra boost of protein, plus I like a creamier consistency in the finished meal.

Next add some cooked chicken, a shredded rotisserie chicken is what I used.
Or you could bake or grill your own chicken to dice or shred.
Then season with taco or fajita seasoning blend of choice.

I also added some of my Blackstone Hatch Chile and Cheddar seasoning, it just sounded perfect for these.

Spoon some green enchilada sauce right over top.

And a little shredded cheese of choice.
Cover these and refrigerate for up to a few days.
Microwave or bake in the oven when ready to serve, but if you do the cottage cheese version it’s soooo good cold.

And add toppings of choice to your Meal Prep Chicken Enchilada Bowls if desired.

I added hot sauce, cilantro, and avocado.

Meal Prep Chicken Enchilada Bowls
Meal Prep Chicken Enchilada Bowls is an easy, tasty, and healthy meal prep recipe using either cauliflower rice or cottage cheese!
Ingredients
- 12 ounces cooked cauliflower rice or cottage cheese
- 1 pound cooked, shredded chicken
- taco or fajita seasoning blend of choice
- 10 ounces green enchilada sauce
- 1 1/2 cups shredded cheese of choice (I used reduced fat Mexican blend)
- Optional: jalapenos, pickled red onions, cilantro, avocado, hot sauce
Instructions

Put the cauliflower rice or cottage cheese into 4 meal prep containers and spread evenly.

Add chicken, taco or fajita seasoning, drizzle enchilada sauce evenly over top, and add cheese.

Cover and refrigerate until ready to enjoy, up to 5 days. To serve, bake in a 400 degree oven for 15 to 20 minutes or microwave for 2 to 3 minutes. Add optional toppings such as jalapenos, pickled red onions, cilantro, avocado, and/or hot sauce.
Note: If you use the cottage cheese option these are even good cold.
