Meal Prep Chicken Enchilada Bowls is an easy, tasty, and healthy meal prep recipe using either cauliflower rice or cottage cheese!

Ingredients
  • 12 ounces cooked cauliflower rice or cottage cheese
  • 1 pound cooked, shredded chicken
  • taco or fajita seasoning blend of choice
  • 10 ounces green enchilada sauce
  • 1 1/2 cups shredded cheese of choice (I used reduced fat Mexican blend)
  • Optional: jalapenos, pickled red onions, cilantro, avocado, hot sauce
Instructions
  1. Put the cauliflower rice or cottage cheese into 4 meal prep containers and spread evenly.

  2. Add chicken, taco or fajita seasoning, drizzle enchilada sauce evenly over top, and add cheese.

  3. Cover and refrigerate until ready to enjoy, up to 5 days. To serve, bake in a 400 degree oven for 15 to 20 minutes or microwave for 2 to 3 minutes. Add optional toppings such as jalapenos, pickled red onions, cilantro, avocado, and/or hot sauce.

    Note: If you use the cottage cheese option these are even good cold.
