Chicken Caesar Pasta Salad is easy to make and really, really good!
This dish is a great way to mix up salad night by adding a little pasta to it.
You can make it even more simple by using those salad kits from the store with the lettuce all chopped up already.
How to Make Chicken Caesar Pasta Salad
You could use shredded rotisserie chicken, Simple Meal Prep Chicken, or make your own chicken for the salad.
I seasoned a pound of chicken with cajun seasoning and baked it for 20 minutes (these were thin, thicker breasts will take closer to 30 minutes).
You can use any seasoning you prefer, Old Bay would be really good too.

Let the chicken cool and then dice it up for the salad.

My pasta of choice was farfalle.
Or as I like to call it, bowtie pasta.
Boil half of the box according to the package directions.
Then rinse with cold water to stop the cooking and preventing it from getting mushy.

When ready to assemble these salads, put 6 cups of chopped romaine lettuce in a large bowl.
Add the cooked and cooled pasta and the chicken.

If you are going to enjoy all this yumminess right away, add the caesar dressing, parmesan cheese, and croutons and toss until combined.
If you are wanting leftovers, just pack the salad and cheese in containers.
And pack the dressing and croutons in separate containers.
I set some aside for my lunch the next day and it was perfect with the dressing and croutons on the side.

Put a little more parmesan cheese and croutons over top and serve it right away.
The soft pasta with the crunchy lettuce and croutons was a nice combo.
