Sweet Potato Turkey Taco Salads is part of my Blackstone griddle meal prep series, or you can make this easy meal in a skillet and air fryer!

Ingredients
  • 1 large sweet potato diced, skin on
  • olive oil, kosher salt, pepper
  • 1 pound ground turkey, chicken or beef
  • 1 packet taco seasoning
  • 4 (4.3-ounce) bags salad kit of choice (I used Taylor Farms Taco Ranch Salad kits)
  • Optional: sweet mini peppers, jalapenos, avocado, and/or fresh cilantro
Instructions
  1. *See post above for details on how I meal prepped the taco meat, sweet potatoes, and sweet mini peppers on the Blackstone griddle, or you can follow these directions*

    Toss the sweet potatoes with olive oil, kosher salt, and pepper. Place in your air fryer set to 390 degrees for 15 minutes, tossing halfway through.

  2. Preheat your skillet to medium, add the ground meat and taco seasoning packet. Cook 8 to 10 minutes, breaking apart the meat, and add 1/4 cup water halfway through.

  3. Store the sweet potatoes and taco meat in the fridge until ready to assemble the taco salad kits and add toppings of choice such as sweet mini peppers, jalapenos, avocado, and/or fresh cilantro.

    Note: I warmed my sweet potatoes and taco meat in the microwave slightly.
