Taco Loaded Potato Bowls
I meal prepped the taco meat and sweet potatoes on my Blackstone griddle, so these Taco Loaded Potato Bowls were ready in minutes!

How to make Taco Loaded Potato Bowls
I made both white and sweet potatoes on my griddle so my family had options.
Or toss your potato of choice with olive oil, kosher salt, and pepper and air fry them at 400 degrees for 15 minutes.

Same deal with my turkey taco meat, I used my Blackstone griddle but cook yours up in a skillet over medium heat if desired.
Add a taco seasoning packet with water and cook 6 to 8 minutes, mixing a few times.

Now that the taters and taco meat are done, we can assemble the bowls starting with potatoes of choice and taco meat.

Shredded lettuce and cheese are a must, then add additional toppings like sour cream, avocado, pickled red onions, and hot sauce.

When my son had his Taco Loaded Potato Bowl he said it was the BEST thing I ever made 🙂

Taco Loaded Potato Bowls
Taco Loaded Potato Bowls can be made with white or sweet potatoes, I meal prepped mine on the Blackstone griddle to be ready in minutes!
Ingredients
- 1 to 2 Russet or sweet potatoes diced, skin on
- olive oil, kosher salt, pepper
- 1 pound ground beef, turkey, or chicken
- 1 packet taco seasoning
- 1 cup shredded lettuce
- 1 cup shredded cheese of choice
- Toppings of choice: sour cream, hot sauce or taco sauce, jalapenos, pickled red onions, cilantro, avocado
Instructions

Toss the potatoes with olive oil, kosher salt, and pepper. Place in the air fryer at 400 degrees for 15 minutes, tossing halfway through.

While potatoes are cooking, set a skillet over medium heat. Add ground meat and taco seasoning, cook 6 to 8 minutes mixing a few times. Add 1/4 cup of water halfway through.

Pack the potatoes and taco meat in containers and store in fridge until ready to assemble the bowls, or make them all at once. To assemble bowls start with potatoes and add taco meat, lettuce, cheese, and toppings of choice such as sour cream, hot sauce or taco sauce, jalapenos, pickled red onions, cilantro, and/or avocado.
