Taco Loaded Potato Bowls can be made with white or sweet potatoes, I meal prepped mine on the Blackstone griddle to be ready in minutes!

Ingredients
  • 1 to 2 Russet or sweet potatoes diced, skin on
  • olive oil, kosher salt, pepper
  • 1 pound ground beef, turkey, or chicken
  • 1 packet taco seasoning
  • 1 cup shredded lettuce
  • 1 cup shredded cheese of choice
  • Toppings of choice: sour cream, hot sauce or taco sauce, jalapenos, pickled red onions, cilantro, avocado
Instructions
  1. *I meal prepped my potatoes and taco meat on the Blackstone griddle so they were ready to go, see post above for those directions plus 3 additional easy meal ideas, or follow this one*

    Toss the potatoes with olive oil, kosher salt, and pepper. Place in the air fryer at 400 degrees for 15 minutes, tossing halfway through.

  2. While potatoes are cooking, set a skillet over medium heat. Add ground meat and taco seasoning, cook 6 to 8 minutes mixing a few times. Add 1/4 cup of water halfway through.

  3. Pack the potatoes and taco meat in containers and store in fridge until ready to assemble the bowls, or make them all at once. To assemble bowls start with potatoes and add taco meat, lettuce, cheese, and toppings of choice such as sour cream, hot sauce or taco sauce, jalapenos, pickled red onions, cilantro, and/or avocado.
