Buffalo Chicken Stuffed Sweet Potatoes

There are many reasons why I love this recipe for buffalo chicken stuffed sweet potatoes.

In an attempt to not drive myself crazy while working full time and trying to feed my family at least semi-healthy meals.

I plan ahead each week trying to use some of the same prepped ingredients.

This week I am planning two dishes that use Shredded Buffalo Chicken that I can cook in the crockpot on Sunday.

And store in the fridge to use during the week.

My extra meal using the same chicken this week is Buffalo Chicken Wraps.

But you could also try Buffalo Chicken Pizza Roll Ups.

Buffalo Chicken Sweet Potatoes are a magical combination of sweet and spicy.

And they are healthy (especially when topping them with my easy, homemade Healthy Ranch Dressing).

I also make a few extras for lunch the next day.

My kids like sweet potatoes, and they love this buffalo chicken..but for some reason they don’t like them combined.

I just make them a sweet potato to share (topped with butter and brown sugar) and they eat their chicken on the side.

Easy fix and no extra work to make everyone happy.

How to Make Buffalo Chicken Stuffed Sweet Potatoes

Coat the sweet potatoes with olive oil, kosher salt, and pepper (seasoning because it makes the skin extra delicious, and the olive oil helps it crisp up nicely).

Pierce with a fork to let out any air, bake in a 400 degree oven for 45 minutes.

You could do this over the weekend or the night before if it’s a busy weeknight dinner.

Cut each sweet potato in half lengthwise, let them cool.

Scoop out about half of the sweet potatoes to make room for the buffalo chicken.

Save the extras for a side item later in the week (mash with butter, kosher salt, pepper, and brown sugar).

Or use the extras to make Maple Bacon Mashed Sweet Potatoes.

Fill each with Shredded Buffalo Chicken and top with cheese.

Bake in a 400 degree oven for 10-15 minutes.

Ingredients

  • 3 sweet potatoes
  • olive oil, kosher salt, pepper
  • 3-4 cups shredded chicken in buffalo sauce
  • 2 cups shredded cheese
  • Optional toppings: ranch dressing, more buffalo sauce, blue cheese crumbles, green onions

Instructions

  1. Coat each sweet potato with olive oil, kosher salt, and pepper. Pierce with a fork. Bake in a 400 degree oven for 45 minutes.

  2. Cut each sweet potato in half lengthwise and let cool. When cool enough scoop out about half of the sweet potato to make room for the chicken.

  3. Fill each sweet potato with shredded buffalo chicken and top with cheese. Bake in a 400 degree oven for 10-15 minutes.

  4. Serve topped with ranch dressing, extra buffalo sauce, blue cheese crumbles, and green onions.
