Air Fryer BBQ Chicken Loaded Sweet Potatoes
I made these Air Fryer BBQ Chicken Loaded Sweet Potatoes as part of my Blackstone BBQ Chicken and Veggie Meal Prep series.
So the chicken was already cooked and ready to go, making this dinner super simple to prepare.
But any cooked chicken, even a shredded rotisserie chicken, will work juuuuuust fine.

How to make Air Fryer BBQ Chicken Loaded Sweet Potatoes
Start by dicing 2 sweet potatoes.
Toss them in olive oil, kosher salt, pepper, and your favorite seasoning blend.
And air fryer them for 15 minutes at 400 degrees.

Then divide between two plates or bowls.

Add your cooked chicken and some shredded cheese, I went with mozzarella.
Pop into the microwave until the cheese is melted and drizzle with your favorite BBQ sauce.
I also added a cilantro lime taco sauce, but hot honey would be really good too.

Air Fryer BBQ Chicken Loaded Sweet Potatoes
Air Fryer BBQ Chicken Loaded Sweet Potatoes is a simple recipe for a quick dinner, I meal prepped my chicken on the Blackstone griddle!
Ingredients
- 2 small to medium sweet potatoes diced, skin on
- olive oil, kosher salt, pepper, BBQ seasoning blend of choice
- 1 cup cooked, diced chicken (I meal prepped mine on my Blackstone, recipe in post above)
- 1 1/2 cups shredded mozzarella cheese
- BBQ sauce
- hot sauce or hot honey (optional, I used a cilantro lime hot sauce)
Instructions

Toss the sweet potatoes with the olive oil, kosher salt, pepper, and BBQ seasoning blend. Put them in the air fryer and set it to 400 degrees for 12 to 15 minutes.

Divide sweet potatoes between two plates or bowls. Add chicken and cheese, microwave until cheese is melted.

Drizzle BBQ sauce and hot sauce or hot honey (if using) over top and enjoy!
