Italian Sausage Tortellini Soup

Maybe the best part of cold weather (if I’m trying to find something good) is comfort food recipes like Italian Sausage Tortellini Soup.

I’m a summer girl at heart, getting through winter with cozy comfort food is the only thing that keeps me powering through.

You kinda can’t go wrong with sausage and pasta, am I right?!

How to Make Italian Sausage Tortellini Soup

Start by setting out all your ingredients…

And set a large soup pot over medium heat.

Add the ground Italian sausage and cook for 7 to 8 minutes, breaking it apart with your spatula as it cooks.

Then remove the cooked sausage and place the same soup pot over medium heat.

Add some olive oil, a diced, onion, a diced red pepper, and season with kosher salt, pepper, and crushed red pepper flakes.

This will cook for 5 minutes, and stir it a few times throughout.

Then some fresh, minced garlic will join the party.

Cook the garlic for about a minute and be prepared for the glorious aroma that will fill your kitchen 🙂

Then add the cooked sausage, a can of crushed tomatoes, Italian seasoning, and four cups of chicken broth.

Once that comes to a boil, reduce the heat and simmer for about 15 minutes.

Finally, add the tortellini, heavy cream, and chopped spinach.

Tortellini packages come in SO many different sizes.

I have found with recipe testing this soup if you can find a 19 ounce bag like this it’s the perfect amount.

When you add the spinach it looks like a lot at first.

It will cook down to almost nothing, so just trust me here 🙂

Once the pasta, spinach, and cream are added and we are back to a boil again, reduce the heat and let it simmer for 10 more minutes.

Taste for seasoning and more kosher salt, pepper, Italian seasoning, and/or crushed red pepper flakes if needed.

Ingredients

  • 1 pound ground Italian sausage
  • 1 Tbsp olive oil
  • 1 onion diced
  • 1 red bell pepper diced
  • kosher salt, pepper, crushed red pepper flakes
  • 5 cloves garlic minced
  • 1 15 oz can crushed tomatoes
  • 4 cups chicken broth
  • 1 1/2 Tbsps Italian seasoning
  • 1 19 oz bag frozen cheese tortellini
  • 10 oz fresh spinach leaves chopped
  • 1 pint heavy cream

Instructions

  1. Set a large soup pot over medium heat. Add the Italian sausage and cook 7 to 8 minutes, breaking it apart as it cooks. Remove from the pot and set aside.

  2. Add the olive oil to the same pot, once hot add the diced onions, red pepper, kosher salt, pepper, and crushed red pepper flakes. Cook 5 to 6 minutes, stirring occasionally.

  3. Add the garlic and cook 1 minute, then add the cooked Italian sausage, crushed tomatoes, chicken broth, and Italian seasoning. Bring to a boil and reduce the heat and simmer 15 minutes.

  4. Add the tortellini, spinach, and heavy cream and simmer 10 more minutes. Taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes, and Italian seasoning if needed.
