Slow Cooker Chicken Tortilla Soup
This recipe for Slow Cooker Chicken Tortilla Soup was every bit as delicious as it was comforting 🙂
Isn’t there just something about a yummy soup slow cooked on a cold day that gives you a cozy feeling?
Maybe I’m just weird like that, but every time I thought of coming home to a dinner that was waiting for me I got a warm, fuzzy feeling.
Working full time comes with its challenges at dinner time.
I find that making slow cooker meals eases the pain just a bit.
Especially if you prepare it the night before and put the Crock Pot insert in the fridge overnight.
Then in the morning put the insert back in and turn on low.
How to Make Slow Cooker Chicken Tortilla Soup
I put a pound and a half of chicken breasts in the slow cooker first.
And season with kosher salt, pepper, and crushed red pepper flakes.
I go heavy on the crushed red pepper flakes because we LOVE spicy around here.
Adjust to your taste preference of course.
Then added a diced onion, garlic, diced red bell pepper, and two jalapenos.
Next add a can of corn that has been drained and two cans of Rotel.
Then chili powder, paprika, cumin, lime juice, and 4 cups of chicken broth.
Set the slow cooker to low for 6 to 8 hours.
When ready to serve, shred the chicken with two forks right in the slow cooker.
Taste for seasoning and add more kosher salt and pepper if needed.
Miraculously mine was perfectly seasoned 🙂
That hardly ever happens!
Serve the Slow Cooker Chicken Tortilla Soup in bowls.
And add toppings of choice such as cheese, hot sauce, cilantro, and of course some tortilla strips!
Sour cream and extra lime juice were also popular toppings in our family.

Slow Cooker Chicken Tortilla Soup
Slow Cooker Chicken Tortilla Soup is a delicious and flavorful soup make in the slow cooker topped with cheese and crunchy tortilla strips!
Ingredients
- 1 1/2 pounds chicken breasts
- kosher salt, pepper, crushed red pepper flakes
- 5 cloves garlic minced
- 1 onion diced
- 2 jalapenos seeded and diced
- 1 red bell pepper diced
- 1 14 oz can corn drained
- 2 10 oz cans Rotel
- 1 1/2 Tbsps chili powder
- 1 1/2 Tbsps paprika
- 1/2 Tbsp cumin
- 1 Tbsp lime juice
- 4 cups chicken broth
- Optional toppings: hot sauce, cheese, tortilla strips, sour cream
Instructions

Put the chicken breasts in the slow cooker and sprinkle with kosher salt, pepper, and crushed red pepper flakes.

Add the garlic, onion, jalapeno, red bell pepper, corn, Rotel, chili powder, paprika, cumin, lime juice, and chicken broth.

Cook on low for 6 to 8 hours. Shred the chicken with two forks right in the slow cooker. Taste for seasoning and add more kosher salt and pepper if needed.
