Slow Cooker Buffalo Chicken Chili

Slow Cooker Buffalo Chicken Chili is my spin on traditional chili that I came up with because my kids and husband and all buffalo recipe fanatics!

My slow cooker/ Crock Pot is my best good friend during extra busy weeks, especially when it’s cold outside.

I know even after a long, busy day I have something yummy and cozy to look forward to when I get home.

It was my goal to combine the flavors of chili with buffalo wings, and I think after a few attempts this tried and true recipe is spot on!

How to Make Slow Cooker Buffalo Chicken Chili

Two pounds of boneless, skinless chicken breasts will go in the slow cooker.

Then season those with chili powder, kosher salt, pepper, and a packet of dry ranch seasoning.

Why the ranch seasoning you may ask?!

Because my family ALWAYS dips their chicken wings in ranch.

Next add a diced onion, minced garlic, and two minced jalapenos (seeds removed) to the slow cooker.

Some buffalo sauce of course joins the party!

We like Frank’s Buffalo Wing Sauce, but any buffalo sauce will work.

Then two cans of Rotel tomatoes with green chiles.

Slow Cooker Buffalo Chicken Chili

Finally a few cans of chicken broth and you can give it a stir.

And turn the slow cooker to low for 6 to 8 hours.

Then shred the chicken with two forks right in the slow cooker and add a block of cream cheese.

Stir it a few times and it should be nice and melted in about a half hour.

We topped our Slow Cooker Buffalo Chicken Chili with cheese and Fritos for a little crunch.

This is a perfect dinner for any night, but also a great idea for a game day snack!

Slow Cooker Buffalo Chicken Chili

Slow Cooker Buffalo Chicken Chili is a delicious spin on traditional chili, all slow cooked to perfection with lots of buffalo chicken flavor!

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 Tbsp chili powder
  • kosher salt, pepper
  • 1 packet dry ranch seasoning
  • 1 onion diced
  • 2 jalapeno peppers seeds removed and minced
  • 4 cloves garlic minced
  • 1 cup buffalo wing sauce
  • 2 10 oz cans Rotel Tomatoes with Green Chiles
  • 2 14 oz cans chicken broth
  • 8 oz cream cheese
  • Optional toppings: shredded cheese and Fritos

Instructions

  1. Place the chicken in the slow cooker. Season with chili powder, kosher salt, pepper, and the packet of dry ranch seasoning.

  2. Add the diced onions, minced jalapenos, garlic, buffalo wing sauce, Rotel, and chicken broth. Give it a stir and turn it on low for 6 to 8 hours.

  3. 30 minutes before serving, shred the chicken with two forks right in the slow cooker. Add the cream cheese. Stir a few times until the cream cheese is melted and evenly combined.

  4. Top with shredded cheese and Fritos if desired.
