Buffalo Chicken Sloppy Joes
Buffalo Chicken Sloppy Joes were a super easy recipe to make, making it mom friendly just as much as it was kid friendly.
My husband and kids love anything buffalo-y.
So I tried a new spin on sloppy joes using buffalo sauce.
Oh, they were messy alright…but also really, really good and already being requested again soon.
My kids aren’t afraid of spice at all, so I say “kid friendly” as long as your little ones like spicy foods.
How to Make Buffalo Chicken Sloppy Joes
In a skillet over medium heat add some olive oil and a diced onion. Let that cook for a few minutes.
Next add a good amount of minced garlic and a pound of ground chicken.
Season that with kosher salt and pepper.
Break the chicken apart as it cooks for about 5 minutes or so.
Then add a can of Rotel tomatoes and a cup of your favorite buffalo sauce.
This is where you can control the amount of spice you prefer.
We used Sweet Bay Ray’s Buffalo Wing Sauce.
But if you prefer, use a milder sauce or even a spicier sauce.
Once you add the sauce, let it simmer for a few more minutes, stirring a few times as it cooks.
Serve Buffalo Chicken Sloppy Joes on burger buns and top with ranch or blue cheese dressing.
I mixed blue cheese crumbles into my ranch dressing, but the kids just had regular ranch.
Have plenty of napkins ready and enjoy!

Buffalo Chicken Sloppy Joes
Buffalo Chicken Sloppy Joes is an easy and delicious one pan meal, a creative twist on an old favorite and a dinner the whole family will love!
Ingredients
- 1 Tbsp olive oil
- 1 onion diced
- 3 cloves garlic minced
- 1 pound ground chicken
- kosher salt, pepper
- 1 10 oz can Rotel
- 1 cup buffalo sauce
- 4 hamburger buns
- Optional: ranch dressing and/or blue cheese crumbles for topping
Instructions

Set a large skillet over medium heat and add the olive oil and diced onion. Cook 4 to 5 minutes, stirring occasionally.

Add the minced garlic and ground chicken to the skillet. Season with kosher salt and pepper. Cook 4 to 5 minutes, breaking it apart as it cooks.

Add the Rotel and Buffalo sauce, cook over medium low heat for 5 more minutes, stirring occasionally.

Serve on the hamburger buns and top with ranch dressing and/or blue cheese crumbles.
Note: I mixed my blue cheese crumbles with the ranch dressing.
