
Air Fryer Chicken Teriyaki
Air Fryer Chicken Teriyaki was the very first healthy dinner recipe of the new year.
Over the holiday season I used my air fryer for some naughty snacks like Air Fryer Jalapeno Poppers and Air Fryer Mac and Cheese Bites.
Now that I ate my weight in cheese and bacon for two weeks, I suppose it’s time to start using it again for some nice, healthy meals again.
Although this dish is completely guilt free…it still tasted amazingly scrumptious and satisfying 🙂
How to Make Air Fryer Chicken Teriyaki
I cut some chicken breasts into inch size pieces and marinated them with teriyaki sauce and garlic.
These marinated only for an hour, but I imagine that marinating them overnight would be even better.

Hey, I even used a healthier teriyaki sauce without the high fructose corn syrup 🙂
I could have made some homemade sauce, yes…but taking help from the store keeps me balanced and in a better mood for that sweet husband of mine 😉

A few minutes before cooking, I chopped a red bell pepper, large carrot, and some mushrooms.
Then tossed them with some of the teriyaki sauce as well.

Next stop was the air fryer basket…I put the chicken on one side and the veggies on the other.
Honestly they would be perfectly fine mixed together because they all cook above 170 degrees, but this is just the way I did it.
Make sure to do this by hand or with tongs, you don’t want the extra marinade ending up in the air fryer.
These overlapped slightly but fit perfectly in my 5.8 quart air fryer.
If you have a smaller air fryer, just do two smaller batches.
One batch for round one of dinner, and the next batch for seconds 🙂

Set the air fryer to 390 degrees for 15 to 18 minutes.
Oh, and shake the basket two or three times so everything cooks evenly.
I was going for that brown caramelization on as many surfaces as I could get.
So, choices when serving Air Fryer Chicken Teriyaki can vary depending on just how healthy you are striving for.
We served ours over Uncle Ben’s Jasmine Ready Rice for two reasons.
1.) It’s super easy to make in the microwave and 2.) Jasmine is my favorite type of rice.
Also with extra teriyaki sauce and Sriracha over top.
Healthier options may be cauliflower rice or whole grain brown rice.
It’s also absolutely delicious just by itself.

Air Fryer Chicken Teriyaki
Air Fryer Chicken Teriyaki has a few simple ingredients and cooked without any oil at all in the air fryer making it super healthy and delicious!
Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts
- 4 cloves garlic minced
- 1/2 cup teriyaki sauce
- 1 red bell pepper
- 1 large carrots
- 6 oz sliced mushrooms
- 2 8.5 oz pouches Uncle Ben's Jasmine Ready Rice (or cooked rice or cauliflower rice of choice)
- Optional: extra teriyaki sauce and/or Sriracha
Instructions

Cut the chicken into inch size cubes, place in a gallon size ziploc bag along with the minced garlic and 1/4 cup of the teriyaki sauce. Massage the bag until evenly mixed. Marinate in the fridge at least an hour or overnight.

Dice the red bell pepper into inch pieces, peel and slice the carrot into similar size pieces. Add the red bell pepper and carrot pieces into a bowl with the sliced mushrooms and add the remaining 1/4 cup teriyaki sauce. Toss until evenly mixed.

Place the chicken in one side of the air fryer in a single layer (it will overlap slightly) and place the veggies in the other side of the air fryer basket.
Note: Place the chicken and veggies by hand so the extra marinade doesn't end up in the air fryer, discard extra marinade. If you have a smaller air fryer this may need to be cooked in smaller batches (it will fit in a 5.8 quart).

Set the air fryer to 390 degrees for 15 to 18 minutes, shaking it two or three times throughout for even cooking.

Microwave the Uncle Ben's Jasmine Ready Rice according to package directions (or rice of choice). Serve the chicken teriyaki over the rice and serve with extra teriyaki sauce and/or Sriracha if desired.
