
Falafel Couscous Veggie Bowls
My daughter comes over on Wednesdays for yoga and we always make a healthy meal together… this week’s recipe creation was Falafel Couscous Veggie Bowls.
Let me just say, this sure didn’t have that healthy meal feel because it was absolutely freakin’ fantastic!!
We aren’t vegetarians, but try to incorporate some meatless recipes here and there, and this one was at the top our new favorite list.

How to make Falafel Couscous Veggie Bowls
I had some store-bought falafel that just required a little warming in the air fryer.
So, I put them in for 10 minutes at 400 degrees.
You could certainly make some yourself or use restaurant leftovers.

While the falafels were doing their thing in the air fryer I made 2 cups of tri-color pearl couscous according to the package directions.
Regular couscous works too, we just really wanted to try the pearl couscous this time.

Drain the couscous and set the same saucepan on the stove over medium heat.
Add a drizzle of olive oil and about 3 cups of a shredded veggie or slaw mix.
Mine had kale, carrots, and red cabbage but use whatever you like or whatever your grocery store offers.
Season with kosher salt and pepper and cook just for a few minutes to slightly soften them, but that they remain a little crisp.

Then add the cooked couscous and some tzatziki sauce.
And mix until combined.

By this time the falafels were cooked perfectly and golden brown.

Assemble the bowls with the couscous and veggie mix first and top with a few falafels, more tzatziki, and crumbled feta cheese.
Goat cheese would be awesome too!

Falafel Couscous Veggie Bowls
Falafel Couscous Veggie Bowls is an easy vegetarian dinner recipe with feta and tzatziki with healthy superfoods perfect for Meatless Mondays!
Ingredients
- 8 to 12 falafels (store-bought/ premade, restaurant leftovers, or homemade)
- 2 cups couscous (I used tri-color pearl couscous)
- olive oil, kosher salt, pepper
- 3 cups shredded vegetables, slaw, or salad kit mix (my mix from produce section had shredded red cabbage, kale, and carrots)
- 8 ounces tzatziki
- 2 ounces crumbled feta cheese
Instructions

Heat falafels if needed, I put my store-bought/premade falafels in the air fryer for 10 minutes at 400 degrees.

Boil couscous according to package directions in saucepan and drain. Set same saucepan on the stove over medium heat. Add olive oil, veggies, kosher salt, and pepper. Cook 3 to 4 minutes so they are slightly cooked but still crisp, stirring a few times.

Add cooked couscous to saucepan with veggies and half of the tzatziki. Stir until combined. Divide between 4 plates or bowls.

Top each with remaining tzatziki, feta cheese, and falafels to serve.
