
Crispy Falafel Lavash Flatbreads
A vegetarian recipe perfect for Meatless Monday or just when you want a low-calorie healthy meal, you’ll want to try these Crispy Falafel Lavash Flatbreads!
I found these ready to heat and serve falafel at a specialty store.
But you could easily reheat restaurant leftovers or make your own falafels at home.
And let me just say how much I absolutely LOVE this new-to-me ingredient of lavash flatbreads… only 120 calories per flatbread and super delish.

How to make Crispy Falafel Lavash Flatbreads
First heat your falafel in the oven or air fryer set to 400 degrees for 10 minutes.

Then place the lavash flatbreads on a lined baking sheet.

And brush some olive oil over each.
Then pop them into a 425-degree oven for 5 minutes to crisp them.

Next spread some tzatziki over each, I went with about 3 tablespoons per flatbread.
Tzatziki can be easily found at most larger grocery stores.

Sprinkle some veggie mix or slaw over top of each flatbread.
My produce section had a package of shredded carrots, red cabbage, and kale but you can mix it up with any veggies you like.
Even some mix from a salad kit would work perfectly.
Cut each falafel in half and place them cut side down on the flatbreads over the veggies.
Then add goat cheese crumbles and garlic and herb seasoning.

I put mine back into the oven for a minute to warm the goat cheese but that’s an optional step.

Slice and serve Crispy Falafel Lavash Flatbreads for a light, healthy meal!

Crispy Falafel Lavash Flatbreads
Crispy Falafel Lavash Flatbreads is a healthy and simple vegetarian recipe using premade or leftover falafel on a super crisp pizza crust!
Ingredients
- 10 to 12 falafel (premade refrigerated, leftover, store-bought, or homemade)
- 2 lavash flatbreads
- 1 tablespoon olive oil
- 1/3 cup tzatziki sauce
- 2/3 cup veggie blend, slaw, or salad kit mix (I used a blend of chopped kale, shredded carrots, and red cabbage)
- 2 ounces goat cheese
- garlic and herb seasoning blend
Instructions

Crisp the falafel in a 400-degree oven or air fryer for 10 minutes. Slice them in half.

Place lavash flatbreads on a baking sheet. Brush olive oil over top and bake in a 425-degree oven for 4 to 5 minutes.

Spread tzatziki evenly over the flatbreads, sprinkle veggie or salad mix over top, place falafel halves (cut side down), and sprinkle goat cheese and garlic herb seasoning over top. Place back into the oven for 1 minute to slightly warm goat cheese.

Slice into smaller pieces with a pizza cutter and serve right away.
