Weekly Meal Plan December 1, 2019
Thanksgiving is over and the holiday season has begun around here. I’m feeling a little splurgy this week and went with lots of cheesy comfort food recipes for this week’s meal plan.
As always, I share three meal recipes and a fun weekend recipe.
I am also sharing my recipe for meal prep chicken as well.
You’ll use the chicken in two of the other recipes.
This will make the other two recipes easier to prepare.
Make this chicken on the weekend and store the shredded chicken in your fridge.
This is a huge time saving trick that I use quite often in many of my weekly meal plans.
Green Chile Chicken Enchiladas
With the chicken already cooked and shredded, this one takes only a few minutes to prepare.
We like to enjoy this with some chips and salsa on the side.
Green chiles are very mild so the kids love this dish!
Jalapeno Popper Twice Baked Potatoes
Remember we are splurging this week with yummy cheesy comfort food recipes …and what’s more comforting than cheesy potatoes with bacon?!
And again, super easy to prepare with that shredded chicken already done.
I must really be craving Mexican with planning the enchiladas AND enchilada soup all in the same week. Similar flavors but a MUCH different meal though.
Plus bonus points for making this in the morning (or night before) and dinner is ready for you when you come home from work.
A cheesy comfort food recipe for Stuffed Jalapenos!
Game day snacks don’t get better than these! Sausage and cheese stuffed in a jalapeno…YUM!
If you have any of the shredded chicken leftover, maybe make a few meal prep salads.
These are Chicken Bacon Ranch Meal Prep Salads and you will most likely have leftovers of just about everything for these salads.
