Chicken Bacon Ranch Meal Prep Salads
I plan ahead for those extra busy days and make this recipe for Chicken Bacon Ranch Meal Prep Salads 🙂
I have been living the dream the past few weeks as a teacher on summer break.
All that came to a screeching halt this week when school started up again.
I feel so blessed to be able to relax and rejuvenate over the summer, but going back to school sends quite a shock to my schedule.
How to make Chicken Bacon Ranch Meal Prep Salads
This starts with grilled chicken, seasoned simply with olive oil kosher salt, and pepper.
At the last minute I decided to add some crushed red pepper flakes because I’m a spice fanatic.
You could also bake the chicken.
The bacon I made in my air fryer, it comes out perfect every time.
I air fried these at 400 degrees for 10 minutes.
As the chicken cooled and the bacon did its thing in the air fryer, I chopped the lettuce and topped with a bit of cheese.
I absolutely LOVE the 2 oz. cups with lids for meal prepping.
You can get these at most grocery stores, or everyone’s best friend…good old Amazon 🙂
For these I did half ranch dressing and half buffalo sauce.
One reason is it’s buffalo sauce, and super delicious…the other reason is it literally cuts the ranch calories in half.
I added a diced tomato and topped each salad with the chicken and bacon.
Snuggle the dressing cup into the salad container and you are set for four lunches, dinners on the go, whatever.

Chicken Bacon Ranch Meal Prep Salads
An easy to make meal prep salad that you will love
Ingredients
- 2 chicken breasts
- olive oil, kosher salt, pepper
- 1 head iceberg lettuce chopped
- 4 slices cooked bacon
- 1/2 cup shredded cheese (or more if you want)
- 1 tomato diced
- 4 oz ranch dressing
- 4 oz buffalo sauce
Instructions

Brush the chicken with olive oil and season with kosher salt and pepper. Grill 4 to 5 minutes per side or bake in a 400 degree oven for 30 minutes.

Once the chicken is cool, dice or shred it.

Divide the chopped iceberg lettuce between 4 meal prep containers.

Top each salad with the cooked chicken, bacon, cheese, and tomato.

Set out four 2 oz. containers with lids, add one oz. ranch and one oz. buffalo sauce to each cup. Put the lids on and place in the salad containers.
