I have been living the dream the past few weeks as a teacher on summer break. All that came to a screeching halt this week when school started up again. I feel so blessed to be able to relax and rejuvenate over the summer, but going back to school sends quite a shock to my schedule. Fear not though…I planned ahead for the busy days to come and made Chicken Bacon Ranch Meal Prep Salads 🙂
How to make Chicken Bacon Ranch Meal Prep Salads
This starts with grilled chicken, seasoned simply with olive oil kosher salt, and pepper.
At the last minute I decided to add some crushed red pepper flakes because I’m a spice fanatic. You could also bake the chicken.
The bacon I made in my air fryer, it comes out perfect every time.
I air fried these at 400 degrees for 10 minutes.
As the chicken cooled and the bacon did its thing in the air fryer, I chopped the lettuce and topped with a bit of cheese.
I absolutely LOVE the 2 oz. cups with lids for meal prepping. You can get these at most grocery stores, or everyone’s best friend…good old Amazon 🙂

For these I did half ranch dressing and half buffalo sauce.
One reason is it’s buffalo sauce, and super delicious…the other reason is it literally cuts the ranch calories in half.
I added a diced tomato and topped each salad with the chicken and bacon. Snuggle the dressing cup into the salad container and you are set for four lunches, dinners on the go, whatever.
Chicken Bacon Ranch Meal Prep Salads can be a busy girl’s best friend!
