Ingredients
  • 10 to 12 falafel (premade refrigerated, leftover, store-bought, or homemade)
  • 2 lavash flatbreads
  • 1 tablespoon olive oil
  • 1/3 cup tzatziki sauce
  • 2/3 cup veggie blend, slaw, or salad kit mix (I used a blend of chopped kale, shredded carrots, and red cabbage)
  • 2 ounces goat cheese
  • garlic and herb seasoning blend
Instructions
  1. Crisp the falafel in a 400-degree oven or air fryer for 10 minutes. Slice them in half.

  2. Place lavash flatbreads on a baking sheet. Brush olive oil over top and bake in a 425-degree oven for 4 to 5 minutes.

  3. Spread tzatziki evenly over the flatbreads, sprinkle veggie or salad mix over top, place falafel halves (cut side down), and sprinkle goat cheese and garlic herb seasoning over top. Place back into the oven for 1 minute to slightly warm goat cheese.

  4. Slice into smaller pieces with a pizza cutter and serve right away.
