Creamy Parmesan Chicken and Potatoes

When my son asked what’s for dinner and I said a fabulous recipe for “Parmesan Chicken and Potatoes” he started with “Well, instead can I have…?”

…I shot him down with a big fat “NOPE” before he could even finish.

My eight year old is a little odd in the fact that he will eat just about anything.

Some of his favorites include sushi, zucchini fries, stuffed mushrooms, and salmon.

So where most kids would be thrilled with chicken and potatoes for dinner, mine was not.

I knew he would love it, and boy was I right!

This dish is AMAZING! He even asked for seconds and he enjoyed every bit of it, just like the rest of my family đŸ™‚

How to Make Creamy Parmesan Chicken and Potatoes

The creamy parmesan sauce is a mixture of sour cream, grated parmesan cheese, garlic, and Italian seasoning.

Whisk that together in a bowl and set it aside.

Next up is cutting these adorable petite redskin potatoes into fourths.

This is one pound exactly.

So to make this as much of a one pan meal as possible, put the cut potatoes into a 9×13 casserole dish along with a few spoonfuls of the creamy parmesan sauce.

Toss them until evenly mixed and sprinkle with kosher salt and pepper.

Then scoot the potatoes to the outer edges of the dish and squeeze in four chicken breasts.

I kinda doubted if these would fit, but I made it all work.

After you breathe a sigh of relief after fitting it all in, season the chicken with kosher salt and pepper.

Spoon the remaining creamy parmesan sauce over the chicken breasts and then we are ready for the oven.

Place this in a 400 degree oven for 40 to 45 minutes.

No need to stir the potatoes or anything đŸ™‚

If you prefer a golden brown top, turn the broiler on for a minute or so at the very end.

The extra sauce in the bottom of the casserole dish did not go to waste, we spooned every bit of it over our super tender, moist, and delicious chicken and potatoes.

Creamy Parmesan Chicken and Potatoes is a delicious and easy one pan meal that the whole family will love, leftovers are just as amazing!

Ingredients

  • 1 cup sour cream
  • 1/2 cup grated parmesan cheese
  • 1 1/2 Tbsps Italian seasoning
  • 1 1/2 Tbsps garlic paste or fresh minced garlic
  • kosher salt, pepper
  • 1 pound petite redskin potatoes
  • 4 medium size boneless, skinless chicken breasts (approx 2 pounds)
  • Optional for garnish: fresh chopped parsley

Instructions

  1. In a small bowl whisk together the sour cream, parmesan cheese, Italian seasoning, and garlic.

  2. Cut the potatoes into fourths and place in a 9×13 casserole dish. Add a few spoonfuls of the sour cream mixture, kosher salt, and pepper and toss until evenly coated. Move the potatoes to the outer edges of the pan to make room to place the chicken breasts in the dish (this may be a tight fit but it will work).

    Note: This recipe calls for petite potatoes, if using regular size redskin potatoes cut each into six pieces.

  3. Season the chicken breasts with kosher salt and pepper. Spoon the remaining sour cream mixture over top of the chicken breasts.

  4. Place the dish in a 400 degree oven for 40 to 45 minutes, turn the broiler on high during the last minute or two of cooking.

  5. Sprinkle with fresh parsley if desired and serve.
