Slow Cooker Korean Chicken Lettuce Wraps
I may or may not be slightly addicted to a recent find at the grocery store…Gochujang Chili Paste! So far I’ve used it in recipes for Grilled Korean Chicken, Korean Steak Kabobs, and now in these Slow Cooker Korean Chicken Lettuce Wraps.
It’s a Korean chili paste that has a unique and slightly spicy flavor.
How to Make Slow Cooker Korean Chicken Lettuce Wraps
I wanted the chicken to be shredded for these lettuce wraps, so I decided to cook it in my slow cooker.
Place a diced onion and 1 to 1 1/2 pounds chicken breasts in the slow cooker/ Crock Pot.
Then whisk together the Gochujang chili paste (found in the Asian section of the store) along with soy sauce, honey, garlic, ginger, and sesame or vegetable oil.
Pour this mixture over the chicken and onions.
After cooking 6 to 8 hours on low, simply shred the chicken with two forks right in the slow cooker.
This takes a minute or two, and at first you’ll think it’s too saucy.
But as the chicken shreds, it soaks up all the sauce and ends up looking just like this…
For the slaw I chose a bag of shredded broccoli slaw. It has broccoli, red cabbage, and carrots.
I also added some sliced green onions.
Once the chicken is cooled slightly, around room temp, you can fill the lettuce wraps.
If you fill them when the chicken is hot the lettuce will wilt and lose that crisp factor.
These are Boston lettuce leaves and I filled each with the chicken.
And drizzled with Spicy Korean Mayo. It’s a mixture of mayo, Gochujang chili paste, and soy sauce.
Then top these Slow Cooker Korean Chicken Lettuce Wraps with the broccoli slaw and sesame seeds.
Dig in right away, and have some napkins handy as these are super fun and messy to eat 🙂
If you are lucky enough to have some of the leftover chicken, it’s very good served over rice or cauliflower rice with more of the Spicy Korean Mayo!

Slow Cooker Korean Chicken Lettuce Wraps
Slow Cooker Korean Chicken Lettuce Wraps start with a few ingredients in the slow cooker, then served in lettuce wraps with a Spicy Korean Mayo!
Ingredients
Slow Cooker Korean Chicken Lettuce Wraps
- 1 onion diced
- 1 to 1 1/2 pounds boneless, skinless chicken breasts
- 2/3 cup soy sauce
- 1/3 cup Gochujang Chili Paste (Asian section of grocery store)
- 1 1/2 Tbsps honey
- 1 1/2 Tbsps garlic paste or fresh minced garlic
- 1 1/2 Tbsps ginger paste or fresh minced ginger
- 1 Tbsp sesame oil or vegetable oil
- 1 head Boston lettuce
- 10 oz bag cole slaw or broccoli slaw
- Optional: sesame seeds and green onions for garnish
Spicy Korean Mayo
- 3/4 cup mayo or light mayo
- 1 to 2 Tbsps Gochujang Chili Paste
- 1 Tbsp soy sauce
Instructions
Slow Cooker Korean Chicken Lettuce Wraps

Put the diced onions in the slow cooker and place the chicken breasts on top of the onions.

Whisk together the soy sauce, Gochujang Chili Paste, garlic, ginger, honey, and oil together in a bowl until evenly mixed. Pour over top of the chicken and onions.

Turn the slow cooker on low for 6 to 8 hours.

Shred with two forks right in the slow cooker.

Let the chicken come to room temp and serve in the lettuce wraps. Top each with the slaw and Spicy Korean Mayo. Garnish with sesame seeds and green onions if desired.
Note: If you have leftover chicken, it is very good served over rice or cauliflower rice with Spicy Korean Mayo.
Spicy Korean Mayo

Mix all ingredients together in a bowl and serve drizzled over the Korean Chicken Lettuce Wraps.
