Honey Sriracha Chicken Tacos

Honey Sriracha Chicken Tacos were my newest recipe creation and they certainly did not disappoint.

I’ve said it before, and I’ll say it again…tacos are my weakness!

So many creative twists and spins, one more delicious than the next.

Oh tacos, how I love you! Ummm, uhhh…sorry husband 😉

Since we are talking favorites here (well, I’m rambling and if you’re still hanging in there and reading, bless you) my favorite chicken cut is the boneless, skinless chicken thigh.

Lots more flavor and juiciness than a breast, also slightly less expensive.

How to make Honey Sriracha Chicken Tacos

So I went with two pounds of boneless, skinless chicken thighs that I cut into bite size pieces.

Then put them in a skillet over medium heat with some olive oil, kosher, salt, and pepper.

Cook the chicken for about 6 to 8 minutes, stirring a few times.

Then add some Sriracha, honey, and soy sauce.

Give it a good stir and let this bubble away over medium heat for another few minutes.

It will thicken slightly and create a glaze over the chicken.

As the chicken is finishing up, make the ranch slaw to top these tacos.

I used a bag of broccoli slaw, a can of corn (drained), chopped cilantro, and ranch dressing.

Toss it until evenly mixed and you have some crispity crunchiness for our tacos!

Now all that’s left to do is build these cute little guys!

I say “little guys” because I absolutely adore using the street size tacos.

Warm them up and fill each some chicken…

Boom! Now it’s the best part, which is of course tasting these Honey Sriracha Chicken Tacos!

They are so unique and unlike any taco I’ve ever had.

A mix of sweet and spicy, the cool crunch of the slaw, the freshness from the cilantro…ok my mind is made up, I’m making these again next week 🙂

Honey Sriracha Chicken Tacos

Honey Sriracha Chicken Tacos are a sweet and spicy twist on traditional tacos, served with a ranch slaw, corn, and shredded cheese

Ingredients

  • 2 pounds boness, skinless chicken thighs (or breasts)
  • 1 Tbsp olive oil
  • kosher salt, pepper
  • 1/3 cup honey
  • 1/4 cup Sriracha
  • 1 Tbsp soy sauce
  • 1 10 oz bag cole slaw or broccoli slaw
  • 1 12 oz can corn drained
  • 1/2 cup cilantro chopped
  • 1/2 cup ranch dressing
  • 15 street taco size tortillas
  • 2 cups shredded cheese of choice

Instructions

  1. Cut the chicken into bite size pieces.

  2. Set a skillet over medium heat and add the olive oil. Once the olive oil is hot add the chicken, kosher salt, and pepper. Cook 6 to 8 minutes, stirring occasionally.

  3. Add the honey, Sriracha, and soy sauce and cook 3 to 4 more minutes.

  4. In a bowl combine the slaw, corn, cilantro, and ranch dressing. Toss until evenly mixed.

  5. Warm the tortillas and fill with the chicken, top with the slaw and shredded cheese.
