Honey Sriracha Chicken Tacos are a sweet and spicy twist on traditional tacos, served with a ranch slaw, corn, and shredded cheese

Ingredients
  • 2 pounds boness, skinless chicken thighs (or breasts)
  • 1 tablespoon olive oil
  • kosher salt, pepper
  • 1/3 cup honey
  • 1/4 cup Sriracha
  • 1 tablespoon soy sauce
  • 1 (10-ounce) bag cole slaw or broccoli slaw
  • 1 (12-ounce) can corn drained
  • 1/2 cup cilantro chopped
  • 1/2 cup ranch dressing
  • 12 street taco size tortillas
  • 2 cups shredded cheese of choice
Instructions
  1. Cut the chicken into bite size pieces.

  2. Set a skillet or your Blackstone griddle over medium heat and add the olive oil, chicken, kosher salt, and pepper. Cook 6 to 8 minutes, stirring occasionally.

  3. Add the honey, Sriracha, and soy sauce and cook 3 to 4 more minutes mixing.

  4. In a bowl combine the slaw, corn, cilantro, and ranch dressing. Toss until evenly mixed.

  5. Warm the tortillas (I placed mine on my griddle for a few seconds) and fill with the chicken, top with the slaw and shredded cheese.
