Grilled Honey Sriracha Chicken

I’m a sucker for the charred, caramelized bits that happen when you grill something with sugar. So I went with a Grilled Honey Sriracha Chicken recipe, or make it on your Blackstone griddle 🙂

I made some Honey Sriracha Chicken Wings a few weeks ago and I needed to have the sauce again.

How to make Grilled Honey Sriracha Chicken

The sauce is super simple. Just honey, Sriracha, and some soy sauce.

Whisk it together and it’s done.

To get the chicken ready for the grill or Blackstone griddle, simply coat with olive oil, kosher salt, pepper, and crushed red pepper flakes.

Then on to a grill or griddle (with a little cooking oil) over medium heat for a few minutes per side.

Then comes the BEST part…the sticky honey Sriracha sauce brushed over top.

Those charred parts is exactly what I was going for here.

Grilled Honey Sriracha Chicken

Sweet and spicy chicken grilled to perfection or cook on your Blackstone griddle!

Ingredients

  • 3/4 cup honey
  • 2 to 4 tablespoons Sriracha (more or less depending on spice preference)
  • 1 tablespoon soy sauce
  • 2 pounds boneless skinless chicken thighs (or breasts)
  • 1 tablespoon olive oil
  • kosher salt, pepper, crushed red pepper flakes

Instructions

  1. In a bowl combine honey, Sriracha, and soy sauce. Whisk together until evenly mixed. Set aside.

  2. Put the chicken in a gallon size plastic bag, add the olive oil, kosher salt, pepper, and crushed red pepper flakes. Massage the bag until evenly mixed.

  3. Preheat the grill or Blackstone griddle over medium heat. Place the chicken on the grill or griddle (with a little oil on the griddle first) for 3 minutes, flip and brush with honey Sriracha mixture.

  4. Flip again after 3 minutes and brush that side with the honey Sriracha mixture. Flip and brush again after 2 more minutes, and once more flip and brush after 2 minutes.

  5. Serve with the remaining honey Sriracha sauce on the side for dipping.
