
Blueberry Cottage Cheese Bites
These Blueberry Cottage Cheese Bites make the perfect breakfast or protein packed mid-day snack idea.
I baked them in a muffin tin and stored the individual portions in a covered container in the refrigerator for reheating throughout the week.
Super easy, slightly sweet thanks to the maple syrup, and pretty healthy thanks to the oats, blueberries, eggs, and cottage cheese!

How to make Blueberry Cottage Cheese Bites
First put a cup of cottage cheese and 1/2 cup of quick cooking oats into a bowl.

Then add 2 eggs, 1/4 cup of pure maple syrup, some ground cinnamon and a pinch of kosher salt.
Mix this until combined.

Next pour in a pint of fresh blueberries.
And gently fold until combined making sure not to bust up the blueberries too much.

Spray a regular size 12-count muffin tin with nonstick cooking spray.
And use a spoon to fill the muffin pan.

Finally, bake in a 350-degree oven for 18 to 21 minutes.
We want the batter to be set and the tops to be slightly golden.

Let Blueberry Cottage Cheese Bites cool for a few minutes before removing from the muffin pan 🙂
They are delicate, so a metal kitchen spoon was what I used to remove them.
Enjoy warm right out of the oven or store in the fridge and reheat to enjoy throughout the week for a quick breakfast or snack option.

Blueberry Cottage Cheese Bites
Blueberry Cottage Cheese Bites is a protein packed breakfast idea or mid-day snack made with oatmeal, maple syrup, and eggs in muffin tins!
Ingredients
- 8 ounces cottage cheese
- 1/2 cup quick cooking oats
- 2 eggs
- 1/4 cup pure maple syrup
- 1/2 teaspoon ground cinnamon
- pinch kosher salt
- 1 pint blueberries
- nonstick cooking spray
Instructions

Put the cottage cheese, oats, eggs, syrup, cinnamon, and salt in a bowl. Stir until combined. Gently fold in the blueberries.

Spray a regular size 12-count muffin tin with nonstick spray. Spoon the batter into the muffin tin.

Bake in a 350-degree oven for 18 to 21 minutes. Let cool for several minutes and serve warm.
Note: These are delicate, I had the best luck removing them gently with a metal kitchen spoon.
