Ingredients
  • 8 ounces cottage cheese
  • 1/2 cup quick cooking oats
  • 2 eggs
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon ground cinnamon
  • pinch kosher salt
  • 1 pint blueberries
  • nonstick cooking spray
Instructions
  1. Put the cottage cheese, oats, eggs, syrup, cinnamon, and salt in a bowl. Stir until combined. Gently fold in the blueberries.

  2. Spray a regular size 12-count muffin tin with nonstick spray. Spoon the batter into the muffin tin.

  3. Bake in a 350-degree oven for 18 to 21 minutes. Let cool for several minutes and serve warm.

    Note: These are delicate, I had the best luck removing them gently with a metal kitchen spoon.
