
Hibachi Shrimp Fried Rice

The second my husband gave me my birthday gift, I knew I wanted to make Hibachi Shrimp Fried Rice!
It was a flat top griddle insert for our grill and a fancy set of hibachi spatulas!
I have since upgraded to a Blackstone Griddle that I use at least weekly.

The most important part of making this dish is having all of your ingredients prepped and ready to go.
Once you start, it goes pretty quick.
And since you are cooking outside, it eliminates running back in the kitchen and back out again.
And another trick is using cooked Jasmine rice that has been cooled.
It crisps instead of getting mushy, which is one thing that makes hibachi rice extra special.

How to make Hibachi Shrimp Fried Rice
Heat your flat top grill to medium high and let it preheat for at least 5 minutes.
Then add some sesame oil and spread it evenly over the grill with the hibachi spatula.
First add the rice, onion, and beaten eggs.
Let them cook about two minutes and start mixing them together.

Next add a bag of frozen peas and carrots that have been thawed and mix those together.

It’s best to have a hibachi buddy for this, unless of course you’re a professional 😉
My husband and I were a pretty good team and had lots of fun with this!
As I added the soy sauce, butter, garlic, sesame seeds, kosher salt, and pepper, he was an excellent flipper and mixer.

After a few minutes it all came together.
We spread it out and let it crisp slightly and flipped it a few times.

A few minutes before the rice is done, put it all on one side of the grill and make room for the shrimp.
First a bit more sesame oil then add the shrimp and top with soy sauce and fresh lemon juice.
The shrimp will cook only about 2 to 3 minutes.

Then mix it all together and serve Hibachi Shrimp Fried Rice with homemade Yum Yum sauce.
Earlier I made the sauce by whisking together mayo, ketchup, sugar, paprika, and garlic powder.

Super easy and the BEST sauce for this rice.
At dinner we got a five star review from the kids.
They even requested that we have this at least once a week 🙂

Hibachi Shrimp Fried Rice
Hibachi Shrimp Fried Rice is very similar to Benihana fried rice, cooked on a flat top grill and served with Yum Yum sauce!
Ingredients
Yum Yum Sauce
- 3/4 cup mayo
- 1/4 cup ketchup
- 1 Tbsp sugar
- 1 tsp paprika
- 1 tsp garlic powder
Hibachi Fried Rice
- 2 Tbsps sesame oil
- 6 cups cooked Jasmine rice cooled
- 1 onion diced
- 3 eggs beaten
- 1 12 oz bag frozen peas and carrots thawed
- 1/2 cup soy sauce
- 3 Tbsp butter
- 4 cloves garlic minced
- 1 Tbsp sesame seeds
- kosher salt, pepper
Shrimp
- 1 Tbsp sesame oil
- 1 pound jumbo shrimp peeled and deveined
- 1 Tbsp soy sauce
- 1 Tbsp lemon juice
Instructions
Yum Yum Sauce

Add the mayo, ketchup, sugar, paprika, and garlic powder in a bowl and whisk until evenly mixed.
Hibachi Fried Rice

Heat the flat top griddle or hibachi grill to medium high heat for at least 5 minutes.

Add the sesame oil and spread with hibachi spatula, add the rice, onion, and beaten eggs. Cook 2 minutes and mix together with hibachi spatulas.

Add the peas and carrots and cook 1 minute, mixing those together with the rice.

Add the soy sauce, butter, garlic, sesame seeds, and a small amount of kosher salt and pepper. Mix together and cook for 4-5 minutes, flipping the rice over occasionally.
Shrimp
-
When the rice is almost done, move it to the side to make room for the shrimp. Add the sesame oil directly on the flat top and add the shrimp, soy sauce, and lemon juice. Cook 3 minutes and mix the shrimp together with the rice.
Serve the shrimp and fried rice with the Yum Yum Sauce.
