Hibachi Scallops and Bacon Fried Rice
When my daughter was coming home from college for spring break she was greeted with a giant hug along with this griddle recipe for Hibachi Scallops and Bacon Fried Rice.
I show you that I love you through food, my family and friends know this (and probably love this) about me.
This meal was all cooked on my Blackstone griddle, but could be easily adapted to cook in a large skillet or wok.
Just not all at once.
I prepped everything in the kitchen, set it all on a tray and headed out to my Blackstone flat top grill.
This is 4 cups of cooked, cooled jasmine rice.
It’s more likely to get that crisp texture if it’s cooled.
The sauce is soy sauce, garlic, ginger, and lemon juice.
Whisk that together and add a few Tbsps to a pound of scallops to marinate.
How to make Hibachi Scallops and Bacon Fried Rice
First make sure the Blackstone is preheated for about 5 minutes to medium high heat.
A little oil goes down first and then a diced onion, the rice, and 2 eggs.
Mix this around with hibachi spatulas for a few minutes.

Next lay 6 strips of bacon on the griddle.
Also add the remaining soy sauce mixture and some butter to the rice.
Just keep flipping the rice and check the bacon for when it’s ready to flip.
You know how Dory just keeps swimming?!
Well you are are just going to keep on flipping…both the rice and the bacon.
Once the bacon looks done remove it so it can cool.
While the bacon cools add the scallops where the bacon was so they can cook in the bacon grease.
These will cook very quickly, only about a minute per side.
I mean, just take a moment to admire the sear that the Blackstone creates on these gorgeous scallops!
Crumble the bacon into the fried rice and we are ready to eat!
Before starting this meal I made a homemade yum yum sauce.
Simply whisk together mayo, ketchup, sugar, pakrika, and garlic powder.

Hibachi Scallops and Bacon Fried Rice
Hibachi Scallops and Bacon Fried Rice is all cooked on the Blackstone grill or little griddle and served with a homemade yum yum sauce
Ingredients
Yum Yum Sauce
- 3/4 cup mayo
- 1/4 cup ketchup
- 1 Tbsp sugar
- 1 tsp paprika
- 1 tsp garlic powder
Hibachi Scallops and Bacon Fried Rice
- 1/2 cup soy sauce
- 1 Tbsp garlic paste or minced garlic
- 1 Tbsp ginger paste or minced ginger
- 1 Tbsp lemon juice
- 1 pound scallops side muscle removed
- vegetable or sesame oil
- 4 cups cooked, cooled jasmine rice
- 1 onion diced
- 2 eggs
- 6 slices bacon
- 2 Tbsps butter
Instructions

Add the mayo, ketchup, sugar, paprika, and garlic powder in a bowl and whisk until evenly mixed.
Hibachi Scallops with Bacon Fried Rice

Add the soy sauce, garlic, ginger, and lemon juice to a bowl and whisk until evenly combined.

Pat the scallops dry and add 2 Tbsps of the soy sauce mixture and toss until coated and set aside.

Heat the flat top griddle or hibachi grill to medium high heat for at least 5 minutes.

Add some oil and spread with hibachi spatula, add the rice, onion, and eggs. Cook 2 to 3 minutes and mix together with hibachi spatulas.

Lay the bacon strips flat on the grill.

Add the remaining soy sauce mixture and butter to the rice. Mix together and cook for 7 to 9 minutes, flipping the rice over occasionally. Check the bacon and flip when needed.

Once the bacon is cooked remove and let cool, break into smaller pieces and add the bacon to the rice.

Place the scallops on the grill where the bacon was cooking (should be bacon grease for the scallops to cook in), cook 1 minute per side.

Remove the rice and scallops and serve with the yum yum sauce.
