Air Fryer Veggie Quinoa Bowls
Healthy vegetarian, plant based dinners do not get much easier than this recipe for Air Fryer Veggie Quinoa Bowls.
They are packed full of flavor on their own, but they get even better with toppings such as balsamic glaze, feta or goat cheese, and basil.
They can be meal prepped or served right away.

How to make Air Fryer Veggie Quinoa Bowls
So, the veggies are the “air fryer” part of this meal.
But first make 3/4 cup of dry quinoa according to the package directions on the stove.
I like to drizzle some olive oil in mine and season with salt and pepper when it’s done.
Then slice some mushrooms, a red pepper, and half of a red onion and put them in a bowl.
Drizzle in 2 tablespoons each of olive oil and balsamic vinegar.
And season with oregano, garlic powder, kosher salt, and pepper before tossing it all together.
Next stop is the air fryer basket.
Then set the air fryer to 390 degrees for 14 to 16 minutes, mixing it a little halfway through.
Ahhhh, yum!
I mean they would be scrumptious just served by themselves!
To make the bowls, divide the quinoa between two bowls or meal prep containers.
Then pile on those gorgeous veggies!
Add balsamic glaze, goat cheese or feta, and basil to your Air Fryer Veggie Quinoa Bowls!
Each bite is full of yumminess and with that side of feel good healthy eating.

Air Fryer Veggie Quinoa Bowls
Air Fryer Veggie Quinoa Bowls is a healthy vegetarian recipe perfect for Meatless Mondays, super easy to make in the air fryer!
Ingredients
- 3/4 cup dry quinoa
- 1 red bell pepper sliced
- 1/2 red onion sliced
- 8 ounces sliced mushrooms
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon dried oregano
- 1/2 tablespoon garlic powder
- kosher salt, pepper
- Optional: balsamic glaze (vinegar section of store), feta or goat cheese crumbles, fresh basil
Instructions

Cook the quinoa according to the package directions.

Put the bell pepper slices, onions, and mushrooms in a bowl. Add the balsamic vinegar, olive oil, oregano, garlic powder, kosher salt, and pepper. Toss until combined.

Put the seasoned veggies in the air fryer basket. Set the air fryer to 390 degrees for 14 to 16 minutes, toss them together halfway through.

Serve with the quinoa divided between 2 bowls or meal prep containers (I tossed my quinoa with some olive oil, kosher salt, and pepper). Top each with the veggies and with balsamic glaze, feta or goat cheese crumbles and fresh basil if desired.
