Falafel Couscous Veggie Bowls is an easy vegetarian dinner recipe with feta and tzatziki with healthy superfoods perfect for Meatless Mondays!

Ingredients
  • 8 to 12 falafels (store-bought/ premade, restaurant leftovers, or homemade)
  • 2 cups couscous (I used tri-color pearl couscous)
  • olive oil, kosher salt, pepper
  • 3 cups shredded vegetables, slaw, or salad kit mix (my mix from produce section had shredded red cabbage, kale, and carrots)
  • 8 ounces tzatziki
  • 2 ounces crumbled feta cheese
Instructions
  1. Heat falafels if needed, I put my store-bought/premade falafels in the air fryer for 10 minutes at 400 degrees.

  2. Boil couscous according to package directions in saucepan and drain. Set same saucepan on the stove over medium heat. Add olive oil, veggies, kosher salt, and pepper. Cook 3 to 4 minutes so they are slightly cooked but still crisp, stirring a few times.

  3. Add cooked couscous to saucepan with veggies and half of the tzatziki. Stir until combined. Divide between 4 plates or bowls.

  4. Top each with remaining tzatziki, feta cheese, and falafels to serve.
