Shrimp Scampi Biscuit Pizza

Ok, hear me out… Shrimp scampi meets Red Lobster Cheddar Bay Biscuits with lots of cheesy goodness… and we call it Shrimp Scampi Biscuit Pizza?!?!

You as interested as me? Let me show ya how!!

You can easily find the Red Lobster biscuit mix in most grocery stores to use as the crust.

And feel free to mix it up with any toppings of choice, but this simple shrimp scampi was pure cozy comfort food bliss for me 🙂

How to make Scrimp Scampi Biscuit Pizza

First prepare the Cheddar Bay Biscuits according to the package directions, the only change we made was adding 2 extra tablespoons of water.

I had a sleepover with my sweet grandson who wanted to help with this part.

After mixing the dough, spread it evenly on a greased baking sheet.

I had the best luck using the back of a spoon, and it does take minute to even out.

Depending on the size of your baking sheet it may or may not stretch to fit the whole sheet.

Bake the crust in a 400-degree oven for 15 minutes while you prepare to make the shrimp scampi.

I have a pound of shrimp that I chopped, some sliced green onions, lemon wedges, and plenty of freshly minced garlic.

Set a skillet over medium heat and add a stick of butter, the shrimp, and some Old Bay seasoning.

And cook this for about 2 minutes.

Next squeeze in lemon juice, add the garlic, and most of the green onions.

And cook 2 more minutes.

Pour the shrimp and butter mixture evenly over the biscuit crust.

Finally sprinkle both mozzarella and parmesan cheese over top and bake in the 400-degree oven for 10 to 12 more minutes.

Just make sure the crust is cooked through, and the cheese is melted and ooey gooey.

Shrimp Scampi Biscuit Pizza recipe uses Red Lobster Cheddar Bay Biscuit mix as the crust with a cheesy shrimp scampi topping!

Ingredients

  • 1 (11.36-ounce) box Red Lobster Cheddar Bay Biscuit Mix
  • 3/4 cup water (plus 2 tablespoons)
  • 1/2 cup shredded Cheddar cheese
  • 8 tablespoons butter
  • 1 pound jumbo shrimp peeled and deveined, cut into smaller pieces
  • 1 1/2 teaspoons Old Bay seasoning
  • 2 tablespoons lemon juice
  • 8 cloves garlic minced
  • 1 bunch green onions sliced
  • 2 cups shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese

Instructions

  1. Put the biscuit mix in a bowl with the seasoning packet from the box and water, stir until combined. Fold in the Cheddar cheese. Place the dough on a greased baking sheet and use the back of a spoon to spread evenly and flat as possible, about half inch thick.

    Note: Depending on size of the baking sheet it may not fully cover the entire sheet.

  2. Bake in a 400-degree oven for 15 minutes.

  3. While crust is baking, set a large skillet over medium heat. Add butter, shrimp, and Old Bay seasoning, cook 2 minutes stirring a few times.

  4. Add lemon juice, garlic, and most of the green onions. Cook 2 more minutes, stirring a few times.

  5. Add the shrimp to the biscuit crust, pour the butter over top, and sprinkle the mozzarella and Parmesan cheeses over top. Place back into the 400-degree oven for 10 to 12 more minutes or until crust is cooked through.

  6. Garnish with remaining green onions.
