
Weekly Meal Plan January 12
For this week’s meal plan I have healthy recipe ideas for you!
I don’t know about you, but I’m still recovering from the holiday cookies and splurging.
I am starting to feel semi-normal again after last week’s healthy meals, so I am continuing with the theme for this week.
Here are your three healthy recipe ideas for dinners this week, plus your fun weekend recipe!

Maple Mustard Salmon in Foil
This one is pretty awesome for two reasons…number one it’s absolutely delicious.
Number two, it’s basically no clean up because it’s all cooked in foil.
My kids devour this salmon and I’m serving it with Air Fryer Garlic Parmesan Zucchini, which is another favorite of theirs (and mine!).

Air Fryer Garlic Parmesan Zucchini
This simple side dish is cooked in the air fryer, you could cook this in a skillet with olive oil for 7 to 9 minutes stirring occasionally if you don’t have an air fryer.

Southwest Chicken Salad
Just looking at this gorgeous salad makes me instantly feel healthier and happier!
It has an easy homemade dressing as well that’s super healthy.
This one also has a meal prep option to get you another dinner or a lunch to pack for the next day.
My kids will eat just about everything in the salad, they just like it separate.
So a plate with some chicken here, corn there, and a simple salad with lettuce and cheese on the side and they are happy.

Avocado Chicken Salad Wraps are one of the best healthy recipe ideas!
My son calls these “Hulk wraps” because they are green of course.
This is a super healthy chicken salad made with avocados instead of mayo.
I serve them in low carb tortilla wraps with some lettuce.
A side of fresh fruit goes perfectly with these wraps.
If you have kids who won’t eat chicken salad, roll up some turkey or ham with some cheese in the wraps and that’s an easy fix for making everyone happy at dinner 🙂

Air Fryer Buffalo Shrimp
Finally, for the fun weekend recipe we have Air Fryer Buffalo Shrimp.
I never prefer an actual meal on the weekends, I like to snack and have more appetizer-ish things.
This shrimp would go great with a salad though, if you want more of a meal.
