This Slow Cooker Taco Soup recipe is one of the first things I make each fall!

I’m kind of weird about crock pot/ slow cooker meals because I only make them when it’s chilly outside.

All summer long my crock pot sits and waits around for fall and winter to arrive, then it gets used almost weekly.

My husband called it “crack” taco soup because it’s so addicting!

I’m a busy, working mom, so this recipe gets bonus points for being able to prepare it the night before.

That way you can come home, relax in your pajamas and enjoy a cozy bowl of this delicious soup!

How to Make Slow Cooker Taco Soup

I put everything in the crock pot and put it in the fridge overnight.

Then, in the morning I just put the container in the crock pot and turn it on 🙂

Cook a pound of ground beef (or chicken or turkey for a lighter version) with a packet of taco seasoning.

Add it to the crock pot along with a diced onion, black beans, pinto beans, canned corn, tomatoes, green chiles, and garlic.

Pour 4 cups of chicken broth over top and stir in another packet of taco seasoning and a packet of dry ranch seasoning.

Stir it all together and that’s it.

Turn it on low for 6 to 8 hours and the soup is ready and waiting for you after a long day at work.

When you walk into the house it smells unbelievable!

Before serving taste for seasoning, add kosher salt and pepper if needed.

I like a thicker soup, so I use my immersion blender and pulse it a few times.

Garnishing it is “souper” fun! (Get it?! “souper” 😉

Yeah, yeah, I know my poor family has to put up with my goofiness way more than they should have to).

I like sour cream, cheese, cilantro, and tortilla strips with mine.

Hot sauce is also good with Slow Cooker Taco Soup for those who like it spicy.

Slow Cooker Taco Soup

One of my family's favorites, taco soup in the slow cooker is always a hit!

Ingredients

  • 1 pound ground beef, turkey, or chicken
  • 2 packets taco seasoning
  • 1 packet dry ranch seasoning
  • 1 onion diced
  • 1 4 oz can green chiles
  • 2 15 oz cans diced tomatoes
  • 1 15 oz can black beans drained and rinsed
  • 1 15 oz can pinto beans drained and rinsed
  • 2 15 oz cans corn drained
  • 1 Tbsp minced garlic
  • 4 cups chicken broth
  • kosher salt, pepper
  • Optional Toppings: sour cream, cheese, hot sauce, cilantro and/or tortilla strips

Instructions

  1. Cook the ground beef, turkey or chicken in a skillet over medium heat and add 1 of the taco seasoning packets according to the directions on the package.

  2. Put the cooked taco meat into a crock pot. Add the other packet of taco seasoning, packet of dry ranch seasoning, diced onion, green chiles, tomatoes, black beans, pinto beans, corn, garlic, and chicken broth.

  3. Stir everything together until evenly mixed. Cook on low for 6 to 8 hours. Taste for seasoning and add kosher salt and pepper if needed.

    Note: If you prefer a thicker soup, pulse an immersion blender in the crock pot a few times until desired consistency.

  4. Serve topped with sour cream, cheese, hot sauce, cilantro, and tortilla strips if desired.
