Slow Cooker Southwest Chicken and Rice

This Slow Cooker Southwest Chicken and Rice recipe is one of my all time favorite slow cooker meals.

Slow cooker and Crock Pot recipes are one of those simple things that get me through a busy work day.

Just knowing that dinner is basically already done and waiting for me at home is a great feeling.

This day in particular was Monday…during the week before Christmas break (keep in mind I teach second grade!)…AND I had to be at my daughter’s Christmas program that evening!

This recipe is not only that easy to make, it’s super delicious and a hit with my family.

My favorite part, though?!…it’s topped with Fritos!

How to Make Slow Cooker Southwest Chicken and Rice

Two pounds of boneless skinless chicken breasts go into a crock pot.

Top the chicken with a diced onion, minced garlic, a packet of taco seasoning, and a jar of your favorite salsa.

Turn the crockpot on low for 6-8 hours.

This is the best part where the crockpot does basically the rest of the work from here 🙂

Slow Cooker Southwest Chicken and Rice

After 6-8 hours shred the chicken with two forks right in the crock pot.

Then add a can of corn (drained), a can of chicken broth, and a packet of Knorr Mexican Rice.

This type of rice in particular is a fast cooking instant rice.

Plus it already has some yummy seasonings included 🙂

Set the slow cooker to high for 30 minutes and the rice will cook to perfection.

I did stir it a few times.

Now comes the cheese!

Everything is better with cheese 🙂

Once the cheese melts simply top this deliciousness with sour cream, avocado, cilantro and…drum roll please…Fritos!!!

If you like things spicy, add some of your favorite hot sauce to Southwest Slow Cooker Chicken and Rice.

The leftovers were actually even better the next day I think.

Packing some for lunch is highly recommended if you have leftovers.

Slow Cooker Southwest Chicken and Rice

An absolutely delicious meal cooked to perfection in the slow cooker

Ingredients

  • 2 pounds chicken breasts
  • 1 onion diced
  • 4 cloves garlic minced
  • 1 packet taco seasoning
  • 1 15 oz jar salsa
  • 1 14 oz can corn drained
  • 1 14 oz can chicken broth
  • 1 5.4 packet Knorr Mexican rice
  • 2 cups shredded cheese
  • Optional toppings: sour cream, cilantro, Fritos

Instructions

  1. Place the chicken breasts in the slow cooker. Top with diced onions, garlic, taco seasoning, and salsa. Cook on low for 6-8 hours.

  2. With two forks, shred the chicken right in the crock pot. Add the corn, chicken broth, and rice packet. Turn the crock pot on high for 30 minutes (stir a few times as it cooks). Stir in half of the cheese. Save the rest of the cheese to sprinkle on top when serving. Close the lid until it’s melted, approx 5 minutes.

  3. Serve with toppings such as the remaining shredded cheese, sour cream, cilantro, avocado, and Fritos.
