Lasagna Soup

This amazing and easy recipe for Lasagna Soup is every bit as tasty as it sounds!

Everything yummy about a lasagna, but mixing it up a bit and serving it as a soup.

In the winter when it’s cold and yucky outside is the perfect time to make soup!

So, as I said, this is just about all the ingredients in lasagna…the noodles, pasta sauce, ricotta, Italian sausage.

But where’s the cheese you may ask… that gets piled on when serving and melts beautifully over top!

How to make Lasagna Soup

First cook a pound of Italian sausage in a large soup pot over medium heat for about 5 minutes, breaking it apart as it cooks.

Then remove from the pot and drain the excess grease.

Into that same soup pot still over medium heat add olive oil and a diced onion and red pepper.

Season with kosher salt, pepper, and crushed red pepper flakes.

Let this cook for another 5 minutes, stirring a few times.

Add garlic and cook 1 more minute.

Next goes in chicken broth, a jar of pasta sauce, Italian seasoning, ricotta cheese, more kosher salt, pepper, and crushed red pepper flakes.

I also added half a cup of water to the pasta jar after I put the sauce in.

Put the lid on and shake it to get every bit of sauce from the jar.

Bring this to a boil and add 6 uncooked lasagna noodles, breaking them in smaller pieces as you add them in.

This will simmer for 30 minutes, stirring a few times.

When ready to serve, stir in grated parmesan cheese and taste for seasoning.

It will most likely need more kosher salt, pepper, crushed red pepper flakes, or maybe even more Italian seasoning.

To serve, spoon into bowls and add quite possibly the BEST part…

Sprinkle all the cheesy goodness over top and enjoy! We had our Lasagna Soup with garlic bread and it was a fabulous combo!

Lasagna Soup

Lasagna Soup has all the yummy flavors and ingredients of lasagna but served as a soup, perfect comfort food on a cold day!

Ingredients

  • 1 pound ground Italian sausage
  • 1 Tbsp olive oil
  • 1 onion diced
  • 1 red bell pepper diced
  • kosher salt, pepper, crushed red pepper flakes
  • 6 cloves garlic minced
  • 1 15 oz jar tomato pasta sauce (I used Prego)
  • 1 15 oz container ricotta cheese
  • 4 cups chicken broth
  • 2 Tbsps Italian seasoning
  • 1/2 cup water
  • 6 uncooked lasagna noodles
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. Set a large soup pot over medium heat and add the ground Italian sausage. Cook 5 to 6 minutes, breaking it apart as it cooks. Remove and drain excess grease, set aside.

  2. To the same pot over medium heat add the olive oil, diced onion, diced red pepper, kosher salt, pepper, and crushed red pepper flakes. Cook 5 to 6 minutes, stirring a few times. Add the garlic, cook 1 more minute.

  3. Add the sausage back into the pot along with the tomato pasta sauce, ricotta cheese, chicken broth, and Italian seasoning. Pour the half cup water into the empty pasta sauce jar, close the lid and shake, pour the water into the soup.

  4. Bring this to a boil. Break the lasagna noodles into smaller pieces and add them to the soup. Reduce the heat to simmer for at least 30 minutes.

  5. Right before serving add the grated parmesan. Taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes, and Italian seasoning if needed.

  6. Serve the soup with the mozzarella cheese sprinkled over top.
