When my friend told me that she and her daughter were making Pizza Soup I was instantly intrigued.
Everyone has their one work BFF that just makes a job more fun, right?!
Well, my work BFF is awesome!
We teach second grade right next door to each other and can basically communicate a whole conversation just by exchanging looks at each other.
We also share a love of all things food!
I knew I had to make it too, so this is my version…Totally inspired by my friend’s daughter who is the cutest little chef ever 🙂
There was a huge snowstorm this weekend so it was the perfect time for homemade soup.
No need for bread and milk here…just some wine and all the ingredients for this soup!
How to Make Pizza Soup
It starts with some olive oil in a large soup pan and diced onions, a red bell pepper, and sliced mushrooms.
After 5 to 8 minutes add some garlic and spinach.
Now I know spinach is not traditionally a pizza topping, but as a mom it was a great opportunity to hide a veggie.
I’m so sneaky sometimes 😉
Another 5 minutes and add some ground Italian turkey sausage, plus season with some kosher salt, pepper, and crushed red pepper flakes.
It’s hard to take a picture of steaming hot soup, imagine my daughter next to me trying to fan the steam away while I took this picture 🙂
Finally add some mini pepperonis, pizza sauce, beef broth, and Italian seasoning.
Bring this to a boil and then reduce the heat to low and simmer for about 30 minutes.
Top with mozzarella cheese and you have an easy, delicious, and healthy Pizza Soup!
So we devoured our yummy Pizza Soup and then enjoyed a family game night during the snowstorm!
It was the BEST night ever!
I even decided to make Salted Caramel Pretzel Bark mid evening, which made it even better 🙂

All the yumminess of pizza served as a soup
- 1 Tbsp olive oil
- 1 onion diced
- 8 oz mushrooms sliced
- 1 red or green pepper diced
- 6 oz spinach chopped
- 4 cloves garlic minced
- 1 pound ground Italian turkey sausage
- 5 oz bag mini pepperoni
- 4 cups beef broth
- 14 oz jar pizza sauce
- 1 Tbsp dried Italian seasoning
- kosher salt, pepper, crushed red pepper flakes
- 1 cup shredded mozzarella cheese
In a large soup pot over medium heat add the olive oil, onion, mushrooms, red pepper, kosher salt, pepper, and crushed red pepper flakes. Cook 5-8 minutes, stirring occasionally.
Add the spinach and garlic, cook 5 more minutes.
Add the Italian sausage and cook 5 more minutes, breaking up the sausage as it cooks.
Add the mini pepperoni, beef broth, pizza sauce, and Italian seasoning. Bring this to a boil and reduce heat to simmer for 30 minutes, stirring occasionally. Taste for seasoning and add kosher salt, pepper, and crushed red pepper flakes to taste.
Serve with shredded mozzarella cheese on top.
