Italian Sausage Gnocchi Soup was my latest soup recipe creation…SOOOOOO good!
Everyone who know me, understands my LOVE of making soup!
Well…they may not quite understand the weirdness of why, but they know it’s one of my favorite things to make.
Not a ton of ingredients as you can see, so fairly simple and easy to make đŸ™‚
Here is how to make Italian Sausage and Gnocchi Soup
First cook some ground Italian sausage in a large soup pot.
Break it up as it cooks and then remove and set aside.
Into the same pot, add olive oil and a diced onion and red bell pepper.
Season with kosher salt, pepper, and crushed red pepper flakes.
Let this cook for about 5 minutes, stirring a few times.
Add some minced garlic and cook 1 more minute.
Next to join the party is 4 cups chicken broth, a can of crushed tomatoes, Italian seasoning, and the cooked sausage from earlier.
Bring this to a boil, then reduce the heat and let this simmer for 10 minutes.
All the yummy flavors will come together to make this soup extra amazing!
The final step is adding in a cup of heavy cream, a pound of gnocchi, and what looks like a TON of chopped spinach.
The spinach will cook down to barely anything.
Let this simmer for 10 more minutes and it’s soup taste testing time.
Taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes, or Italian seasoning if needed.

Italian Sausage Gnocchi Soup
Italian Sausage Gnocchi Soup is a delicious, comforting soup, Italian sausage and gnocchi are as great combo and perfect together in this soup
Ingredients
- 1 pound ground Italian sausage
- 1 Tbsp olive oil
- 1 onion diced
- 1 red bell pepper diced
- kosher salt, pepper, crushed red pepper flakes
- 5 cloves garlic minced
- 1 15 oz can crushed tomatoes
- 4 cups chicken broth
- 1 Tbsp Italian seasoning
- 1 pound gnocchi
- 3 cups chopped, fresh spinach
- 1 cup heavy cream
Instructions

Set a large soup pot over medium heat. Add the Italian sausage and cook 7 to 8 minutes, breaking it apart as it cooks. Remove from the pot and set aside.

Add the olive oil to the same pot, once hot add the diced onions, red pepper, kosher salt, pepper, and crushed red pepper flakes. Cook 4 to 5 minutes, stirring occasionally.

Add the garlic and cook 1 minute, then add the cooked Italian sausage, crushed tomatoes, chicken broth, and Italian seasoning. Bring to a boil and reduce the heat and simmer 10 minutes.

Add the gnocchi, spinach, and heavy cream and simmer 10 more minutes. Taste for seasoning and add more kosher salt, pepper, crushed red pepper flakes, and Italian seasoning if needed.
