Italian Sausage and Orzo Soup

This Italian Sausage and Orzo Soup was not only a fun and easy recipe to make, it is quite possibly one of my favorite soups of all time.

Soup making days are the happiest of days for me!

There’s just something so magical that happens when taking separate ingredients and flavors and combining them into one pot of yumminess.

How to Make Sausage and Orzo Soup

It starts with a pound of ground Italian sausage in a large soup pot over medium heat.

Cook this for 5 to 7 minutes, and break it apart as it cooks.

Remove the sausage and drain the excess grease. Then set the sausage aside.

Next, into the same pot still over medium heat, add some olive oil, a diced onion, a diced bell pepper.

Season with kosher salt, pepper, and crushed red pepper flakes as well.

Cook the peppers and onion for 5 minutes, stirring a few times.

Then add some garlic and cook 1 more minute.

Add the cooked sausage to the pot.

Along with chicken stock, crushed tomatoes, Italian seasoning, and a bit more kosher salt and pepper.

Once that comes to a boil add in anywhere between 1/2 pound to 3/4 pound orzo pasta.

Less orzo will create a thinner soup, and more will create a thicker, heartier soup.

Keep in mind when adding the pasta, it will get bigger as it cooks.

Let the pasta simmer for 12 minutes, stirring several times as it cooks to prevent the orzo from sticking to the bottom of the pot.

Finishing the Italian Orzo and Sausage Soup

Last step, friends, is adding in chopped spinach and a pint of heavy cream.

Let this simmer away for a few more minutes and your soup is ready!

Taste for seasoning of course.

And add in more kosher salt, pepper, crushed red pepper flakes, and/or Italian seasoning until it’s perfectly perfect for you 🙂

Italian Sausage and Orzo Soup

Italian Sausage and Orzo Soup has lots of yummy Italian flavors and it's the perfect soup to warm up with on a cold day!

Ingredients

  • 1 pound ground Italian sausage
  • 1 Tbsp olive oil
  • 1 onion diced
  • 1 red bell pepper diced
  • kosher salt, pepper, crushed red pepper flakes
  • 1 Tbsp garlic paste or minced garlic
  • 6 cups chicken stock
  • 2 15 oz cans crushed tomatoes
  • 2 Tbsps Italian seasoning
  • 1/2 to 3/4 pound orzo pasta (more or less depending on how thick you want the soup)
  • 4 cups chopped spinach
  • 1 pint heavy cream
  • Optional: parmesan cheese

Instructions

  1. In a large soup pot over medium heat, add the ground Italian sausage. Cook 5 to 7 minutes, breaking it apart as it cooks. Drain excess grease and set the sausage aside.

  2. To the same pot, add olive oil, diced onion, diced red bell pepper, kosher salt, pepper, and crushed red pepper flakes. Cook over medium heat 5 minutes, stirring occasionally. Add the garlic, cook 1 minute.

  3. Add the cooked sausage, chicken stock, tomatoes, Italian seasoning, more kosher salt, and pepper. Bring to a boil, and add the orzo pasta. Reduce the heat to medium low for 12 minutes, stirring often.

  4. Add the spinach and heavy cream, bring to a boil and simmer 6 to 7 more minutes. Taste for seasoning and add more kosher salt, pepper, Italian seasoning, and crushed red pepper flakes if needed.

  5. Serve with parmesan cheese over top if desired.
