Smoked Cajun Chicken Thighs

Smoked Cajun Chicken Thighs may seem simple, but they pack such a punch of flavor you won’t even believe they are only a 5 ingredient recipe!

Chicken thighs are one my favorite ingredients to work with.

They are so juicy, it’s darn near impossible to overcook them or make them dry, and they are fairly inexpensive.

I served 6 people with a side dish of regular box mac and cheese (don’t judge, the kids prefer it) and figured our whole dinner was less than 10 bucks!

Even better it TASTED like a 5 star meal, well at least the chicken did đŸ˜‰

How to Make Smoked Chicken Thighs

Put 6 chicken thighs in a gallon size plastic bag.

Then add 2 Tbsps cajun seasoning and 1 Tbsp each olive oil, red wine vinegar, and garlic paste or minced garlic.

Massage the bag until the chicken is coated and marinate in the fridge for several hours or overnight.

Then place them on a smoker set to 250 degrees. We have a Traeger wood pellet grill/ smoker so it’s super easy to regulate the temp.

The total smoke time is 2 1/2 to 3 hours.

I like to flip them after an hour and a half.

And let them smoke another hour to hour and a half.

Check the temp during the last hour, when they are at 165 to 170 degrees they are ready to go.

Ingredients

  • 2 pounds chicken thighs (approx 6 thighs)
  • 2 Tbsps cajun seasoning
  • 1 Tbsp garlic paste or minced garlic
  • 1 Tbsp olive oil
  • 1 Tbsp apple cider vinegar or red wine vinegar

Instructions

  1. Trim any extra skin from the chicken thighs if needed. Place the thighs in a gallon size plastic bag.

  2. Add the cajun seasoning, garlic, olive oil, and vinegar. Massage the bag until evenly coated. Place in the fridge and marinate several hours or overnight.

  3. Set your smoker to 250 degrees and place the chicken in the smoker. Smoke them 1 1/2 hours and flip them over, smoke another 1 to 1 1/2 hours until the temp is at 170 degrees.
