Air Fryer Coconut Shrimp
Crispity, crunchity Air Fryer Coconut Shrimp was such an easy dinner recipe to make!
And was a little out of the ordinary which was a nice change.
We dipped our shrimp in sweet chili sauce, but you could also dip in ranch.
That always seems like a hit with the kids.
Seriously all you need are panko bread crumbs, sweetened coconut flakes, an egg and a pound of shrimp.
I even managed to whip this up in minutes while getting my son ready for football.
How to Make Air Fryer Coconut Shrimp
Pat a pound of shrimp dry, and make sure they are peeled and deveined.
Crack an egg in one bowl and beat it with a fork.
Then combine a half cup each of the panko and coconut flakes in another bowl.
Boom…you have your breading station all set up next to the air fryer đŸ™‚
Dip each shrimp into the egg and then into the breading.
Press the breading into the shrimp slightly so it sticks, and then put them in the air fryer basket.
Next spray the tops with olive oil cooking spray to help create that gorgeous, golden brown crisp.
Set it to 390 degrees and let the air fryer do the rest of the work from here đŸ™‚
Just look at that crispy coating, SO good!
Serve Air Fryer Coconut Shrimp right away with sweet chili sauce for dipping đŸ™‚
This was our dinner, but these could easily be served as an appetizer or game day snack!
YUM!
