You want a boost of confidence…just make this easy and kid friendly recipe for Cheesy Taco Baked Chicken 🙂
When you make a quick and easy dinner and your eight year old says “Wow mom, that looks REALLY good!”…you grin a little grin.
How to make Cheesy Taco Baked Chicken
This one pan dish starts with four medium size chicken breasts in a casserole dish.

Sprinkle with kosher salt, pepper, and about 1/4 of a taco seasoning packet.

Whisk the remaining taco seasoning with a cup of sour cream and garlic.

Then spoon this mixture over top of the chicken and spread evenly.

It goes into a 400 degree oven for 30 minutes.
And now comes the CHEESY part…two cups of shredded Mexican blend cheese goes over top.
Then back into the oven for 10 more minutes.

Sprinkle with some fresh cilantro and serve Cheesy Taco Baked Chicken just like this, or add some yummy toppings!

We topped ours with salsa and guacamole.

Also served it with tortilla chips and warm soft tortillas.

Cheesy Taco Baked Chicken
Cheesy Taco Baked Chicken is an easy and kid friendly one pan meal
Ingredients
- 4 medium size boneless, skinless chicken breasts (approx 2 pounds)
- kosher salt, pepper
- 1 (1.25-ounce) packet taco seasoning
- 1 cup sour cream (or reduced fat sour cream)
- 1 tablespoon garlic paste or fresh minced garlic
- 2 cups shredded cheese (I used Mexican blend)
- Optional toppings: salsa, cilantro, guacamole, hot sauce, jalapenos
Instructions

Place the chicken breasts in a 9×13 casserole dish. Sprinkle with kosher salt, pepper, and 1/4 of the taco seasoning.

In a bowl whisk together the sour cream, garlic, and remaining taco seasoning.

Spoon the taco sour cream mixture over top of the chicken breasts.

Bake in a 400 degree oven for 30 minutes. Sprinkle the cheese over top and bake an additional 10 minutes.

Serve with optional toppings such as salsa, cilantro, guacamole, hot sauce, and/or jalapenos.
Note: Very good served with tortilla chips or warm tortillas
