When you make dinner and your eight year old says “Wow mom, that looks REALLY good!”…you grin a little grin.
Then at dinner when your husband says “It has so much flavor I don’t even need hot sauce”…that grin turns into a full blown smile with a silent pat on your back.
But when your son says “Mom, this is the BEST chicken dinner you ever made!”.
You start strutting across the kitchen like a boss, like you’re the star of your own show!
My son and I went on a short trip to the beach to escape the mid winter 35 degree temps and get a little fun in the sun.
We just returned last night to freezing rain, and this transition was a little rough on me (I know, cue the world’s smallest violin 😉 ).
My point is I wanted something very quick and easy for dinner, you know, to ease myself back into reality.
Ahhhhh, here we were in paradise…
How to make Cheesy Taco Baked Chicken
This one pan dish starts with four medium size chicken breasts in a casserole dish.
Sprinkle with kosher salt, pepper, and about 1/4 of a taco seasoning packet.
Whisk the remaining taco seasoning with a cup of sour cream and garlic.
Then spoon this mixture over top of the chicken and spread evenly.
It goes into a 400 degree oven for 30 minutes.
And now comes the CHEESY part…two cups of shredded Mexican blend cheese goes over top.
Then back into the oven for 10 more minutes.
Sprinkle with some fresh cilantro and serve Cheesy Taco Baked Chicken just like this, or add some yummy toppings!

We topped ours with salsa and guacamole.
Also served it with tortilla chips and warm soft tortillas.

Cheesy Taco Baked Chicken
Cheesy Taco Baked Chicken is an easy and kid friendly one pan meal
- 4 medium size boneless, skinless chicken breasts (approx 2 pounds)
- kosher salt, pepper
- 1 1.25 oz packet taco seasoning
- 1 cup sour cream (or reduced fat sour cream)
- 1 Tbsp garlic paste or fresh minced garlic
- 2 cups shredded cheese (I used Mexican blend)
- Optional toppings: salsa, cilantro, guacamole, hot sauce, jalapenos
Place the chicken breasts in a 9×13 casserole dish. Sprinkle with kosher salt, pepper, and 1/4 of the taco seasoning.
In a bowl whisk together the sour cream, garlic, and remaining taco seasoning.
Spoon the taco sour cream mixture over top of the chicken breasts.
Bake in a 400 degree oven for 30 minutes. Sprinkle the cheese over top and bake an additional 10 minutes.
Serve with optional toppings such as salsa, cilantro, guacamole, hot sauce, and/or jalapenos.
Note: Very good served with tortilla chips or warm tortillas
