Ingredients
  • 4 medium size boneless, skinless chicken breasts (approx 2 pounds)
  • kosher salt, pepper
  • 1 (1.25-ounce) packet taco seasoning
  • 1 cup sour cream (or reduced fat sour cream)
  • 1 tablespoon garlic paste or fresh minced garlic
  • 2 cups shredded cheese (I used Mexican blend)
  • Optional toppings: salsa, cilantro, guacamole, hot sauce, jalapenos
Instructions

  1. Place the chicken breasts in a 9x13 casserole dish. Sprinkle with kosher salt, pepper, and 1/4 of the taco seasoning.

  2. In a bowl whisk together the sour cream, garlic, and remaining taco seasoning.

  3. Spoon the taco sour cream mixture over top of the chicken breasts.

  4. Bake in a 400 degree oven for 30 minutes. Sprinkle the cheese over top and bake an additional 10 minutes.

  5. Serve with optional toppings such as salsa, cilantro, guacamole, hot sauce, and/or jalapenos.

    Note: Very good served with tortilla chips or warm tortillas
