Caribbean Jerk Shrimp Po Boys
Let’s just be clear, this recipe is the LAZY version of Caribbean Jerk Shrimp Po Boys!
But that’s perfectly ok, sometimes us home cooks need super simple and easy recipes in our lives, right?!
If you want to deep fry your own shrimp, that works too… but I am taking the help from a box of frozen shrimp and my air fryer 🙂
How to make Caribbean Jerk Shrimp Po Boys
I am using the mini King’s Hawaiian sub buns, but any sub bun will work.
First, put some frozen popcorn shrimp in the air fryer or in the oven.
Cook them according to the package directions.
In the air fryer mine took 12 to 15 minutes set to 400 degrees.
When they are done, sprinkle some Caribbean Jerk seasoning over top and also a squeeze of lime juice.
And it’s perfectly acceptable to snack on a few of the seasoned shrimp while you prepare the sandwiches 😉
For the lettuce, I used my mandolin to shred it very thin.
And I also made a sauce to drizzle over top while the shrimp were in the air fryer.
It’s just 1/2 cup mayo, some more of the Caribbean Jerk seasoning, soy sauce, lime juice, and some hot sauce.
You could use a store bought jerk sauce if you prefer.
These Caribbean Jerk Shrimp Po Boys look like a restaurant quality meal!
And, hey… your family doesn’t even have to know how truly easy they were to make!
It can be our little secret 😉
To assemble these, start with a little sauce on the bottom bun (it helps the shrimp to stay on the bun) and then pile on the crispy shrimp.
Add more of the sauce, some lettuce, add the top bun and BOOM… dinner is ready!

Caribbean Jerk Shrimp Po Boys start with frozen shrimp in the air fryer cooked to crispy perfection served with Caribbean Jerk sauce!
Ingredients
Caribbean Jerk Shrimp Po Boys
- 1 12 ounce package frozen popcorn shrimp
- Caribbean Jerk seasoning blend, lime wedges
- 4 sub rolls (I used King's Hawaiian Mini Sub Buns)
- 1 1/2 cups shredded lettuce
- store bought Caribbean Jerk sauce or Caribbean Jerk Aioli
Caribbean Jerk Aioli
- 1/2 cup mayo
- 2 to 3 tsps Caribbean Jerk seasoning blend
- 1 tsp soy sauce
- 1 tsp lime juice
- a few dashes of your favorite hot sauce
Instructions

Cook the shrimp in the oven or air fryer according to the package directions. I cooked mine in the air fryer at 400 degrees for about 12 to 15 minutes.

When the shrimp are finished cooking season them with the Caribbean Jerk seasoning and squeeze some lime wedges over top of the shrimp.

Toast your sub rolls if desired and build each po boy with a bottom layer of the cooked and seasoned popcorn shrimp, store bought Caribbean Jerk sauce or Caribbean Jerk Aioli, and shredded lettuce.

Put all ingredients in a bowl and stir until combined. Serve on the Caribbean Jerk Shrimp Po Boys.
