Crock Pot Street Corn Dip
This easy recipe for Crock Pot Street Corn Dip is sure to be a crowd pleaser!
It’s basically a dump and go slow cooker appetizer with a slight spicy kick.
All the flavors of traditional Mexican street corn turned into a cheesy, creamy party dip.
How to make Crock Pot Street Corn Dip
First add 4 cans of corn (drained) into your slow cooker along with a 4 ounce can of green chiles.
Then add a block of cream cheese, a cup each of mayo and sour cream, and almost 3 cups of shredded cheese.
Cheddar cheese would be perfect, or I used the Mexican blend cheese.
Next in goes chili powder, Tajin seasoning, garlic powder, a few dashes of your favorite hot sauce, kosher salt, and pepper.
Set your Crock Pot/ slow cooker to low for 4 to 6 hours, or high for 2 to 3 hours.
And stir it a few times throughout.
Right before serving, stir in a cup of chopped fresh cilantro.
This is basically the only chopping required in the recipe, which is not too bad!
Top your Crock Pot Street Corn Dip with a little more cheese, cilantro, and chili powder 🙂
Serve this tasty dip recipe with some tortilla chips or Fritos Scoops for dipping.
I turned my slow cooker to the “keep warm” setting until ready to serve.
I’ve made this dip multiple times, but this time I sent it to work with my beautiful step daughter for her work friends to enjoy a nice Friday treat.

Crock Pot Street Corn Dip
Crock Pot Street Corn Dip is an appetizer or party recipe with all the flavors of Mexican Street Corn served as an easy slow cooker dip!
Ingredients
- 4 14 ounce cans corn drained
- 1 4 ounce can green chiles
- 1 8 ounce block cream cheese
- 1 cup mayo
- 1 cup sour cream
- 3 cups shredded cheese (I used Mexican blend)
- 2 1/2 tablespoons chili powder (plus more to sprinkle over top)
- 1 1/2 tablespoons Tajin seasoning
- 1/2 tablespoon garlic powder
- hot sauce of choice
- 1 cup chopped cilantro
- tortilla chips or Fritos Scoops for dipping
Instructions

Put the corn, green chiles, cream cheese, mayo, sour cream, most of the shredded cheese, chili powder, Tajin, garlic powder, a few dashes of hot sauce, kosher salt, and pepper in your Crock Pot slow cooker. You don't need to stir just yet.

Set the slow cooker to low for 4 to 6 hours, stirring a few times throughout. Or set it to high for 2 to 3 hours, stirring a few times.

Stir in most of the cilantro. Add the remaining cheese and cilantro over top and another sprinkle of chili powder. Serve with tortilla chips or Fritos Scoops for dipping.
