Slow Cooker Pizza Soup

Slow Cooker Pizza Soup is a tasty and kid friendly dinner recipe made in the Crock Pot.

Pizza ingredients transformed into a yummy, comforting soup.

We topped ours with mozzarella cheese, because cheese is only the BEST part of pizza (duh!).

And also with some garlic toast 🙂

It was a cold, rainy Sunday where we did nothing but watch football and smelled this amazing dinner slow cooking all day!

How to make Slow Cooker Pizza Soup

Some Crock Pot dinners are dump and go, but this one does require some sausage to be cooked in a skillet.

So first set a skillet over medium heat and add a pound of ground Italian sausage.

I did have to remove the casings because that’s how my sausage came.

Cook 6 to 8 minutes, breaking apart the sausage with a spatula as it cooks.

Drain excess grease and put the sausage in the slow cooker.

Then add a diced onion and red pepper along with fresh minced garlic.

And a bag of mini pepperoni.

Finally in goes a jar of pizza sauce, a tablespoon of chicken base like Better Than Bouillon (which is optional), and 4 cups chicken or beef broth.

Season with Italian seasoning, kosher salt, pepper, and crushed red pepper flakes.

Give it a stir and turn the Crock Pot slow cooker to low for 6 to 8 hours.

After it’s been cooking low and slow, add in some fresh chopped spinach.

Stir and let it cook for another half hour.

Oh yum!

Now we just need to add the yummy cheese!

I did taste for seasoning, just add more Italian seasoning, kosher salt, pepper, and/or pepper flakes if needed.

Ingredients

  • 1 pound ground Italian sausage remove casings if needed
  • 1 onion diced
  • 1 red bell pepper diced
  • 5 to 7 cloves garlic minced
  • 1 5 ounce bag mini pepperoni
  • 1 14 ounce jar pizza sauce
  • 1 tablespoon chicken base (optional) I used Better Than Bouillon
  • 4 cups chicken or beef broth
  • 1 tablespoon dried Italian seasoning
  • kosher salt, pepper, crushed red pepper flakes
  • 5 ounces chopped fresh spinach
  • 1 to 2 cups shredded mozzarella cheese
  • Optional: garlic bread or garlic toast

Instructions

  1. Set a skillet over medium heat. Add the Italian sausage and cook 6 to 8 minutes, breaking apart the sausage with a spatula as it cooks. Drain excess grease and put the sausage in the slow cooker.

  2. Add the diced onion and pepper to the slow cooker along with the garlic, pepperoni, pizza sauce, chicken base (if using), chicken or beef broth, Italian seasoning, kosher salt, pepper, and crushed red pepper flakes.

  3. Turn the slow cooker on low for 6 to 8 hours. Stir in the chopped spinach and cook 30 more minutes. Taste for seasoning and add more kosher salt, pepper, Italian seasoning, and/or red pepper flakes if needed.

  4. Serve the soup topped with mozzarella cheese and with garlic bread or garlic toast of desired..
