Slow Cooker White Chicken Chili
Slow Cooker White Chicken Chili is a pretty easy and healthy recipe for the Crock Pot!
You can jazz it up with toppings of choice like cheese, hot sauce, lime wedges, and even avocado.
We added some Fritos for a nice crunch too 🙂
White chicken chili is basically chili made with no tomatoes, and with chicken instead of beef.
Definitely a nice change from my traditional chili.
How to make Slow Cooker White Chicken Chili
We have some basic chili ingredients to start with.
First put 1 1/2 pounds of chicken in the slow cooker and add a diced onion and some minced garlic.
Then add a can of corn (drained) and a can of green chiles or jalapenos.
And the spices which include chili powder, paprika, Old Bay, cumin, kosher salt, and pepper.
Simple enough so far, right?!
Finally add 4 cups of chicken broth.
And set the Crock Pot to low for 6 to 8 hours.
Once it’s all cooked, use two forks to shred the chicken right in the slow cooker.
Then add some sour cream and stir it all together.
Taste for seasoning and add more of the spices or kosher salt and pepper if needed.
This next step is optional, but recommended for a creamier and thicker chili.
Use an immersion blender and pulse it a few times to slightly blend the chili.
Or you can transfer some of the chili to a blender or food processor and then put it back in the Crock Pot.

Slow Cooker White Chicken Chili
Slow Cooker White Chicken Chili is an easy and healthy dinner recipe for the Crock Pot, add toppings of choice like avocado and cheese!
Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts
- 1 onion diced
- 6 to 7 cloves garlic minced
- 1 4 ounce can diced green chiles or jalapenos
- 1 15 ounce can corn drained
- 1 tablespoon Old Bay seasoning
- 1 tablespoon chili powder
- 1 tablespoon paprika
- 1/2 tablespoon cumin
- kosher salt, pepper
- 4 cups chicken broth
- 1 cup sour cream
- Optional toppings: cheese, sliced jalapenos, hot sauce, diced avocado, lime wedges, cilantro or green onions
Instructions

Put the chicken, diced onion, minced garlic, green chiles or jalapenos, and corn in the slow cooker. Add the Old Bay, chili powder, paprika, cumin, kosher salt, and pepper.

Pour the chicken broth over top and set the slow cooker to low for 6 to 8 hours.

Use two forks to shred the chicken in the slow cooker. Then add the sour. Taste for seasoning and add more kosher salt, pepper and/ or any of the other spices if needed.
Optional: For a thicker, creamier chili use an immersion blender in the slow cooker and pulse several times to slightly blend the chili. Or scoop about 1/3 of the chili into a blender, pulse a few times, and return the chili to the slow cooker and stir.
