Shrimp Pesto Garlic Bread Pizzas

The theme for these incredible shrimp pesto garlic bread pizzas is a trio of easy, simple, and the best of all… a tremendously tasty recipe!

My parents come over once a week so I can spoil them with delicious food and these were a huge hit on the menu this week.

SOOO nice of them to come over and help me recipe test and taste to make sure everything is perfection đŸ˜‰

Plus it’s the least I can do for them giving me the best childhood ever and instilling my love of great food and cooking.

How to make shrimp pesto garlic bread pizzas

This could be served as either an appetizer or dinner with a side dish or two.

I wanted something that you could throw together in no time, so I am using some store bought ingredients (insert my “work smarter, not harder” motto).

Therefore store bought pesto and frozen garlic Texas toast came to the rescue.

Yeah yeah you could use already cooked shrimp and it would make it easier, but it wouldn’t be nearly as flavorful.

The first step is putting the garlic toast on a lined baking sheet.

And placing it in a 425 degree oven for 5 to 6 minutes.

And as the garlic bread cooks in the oven, set a skillet over medium heat.

Then add some olive oil, a pound of peeled and deveined shrimp, lemon juice, old Bay seasoning, kosher salt, pepper, and crushed red pepper flakes.

Old Bay seasoning does contain salt so not too much kosher salt is needed.

Shrimp cook fairly quickly, only about two to three minutes in the skillet stirring a few times.

Once the shrimp are cooked, remove them from the skillet and let them cool slightly.

Then chop them into smaller pieces.

And now, my friends, we build our pizzas!

Start with some store bought pesto, just spread evenly over each piece of garlic toast.

If you insist on using homemade pesto I do have an incredible recipe for homemade basil pesto that freezes very well.

Then top each with the cooked shrimp, sliced green onions, and some shredded mozzarella cheese.

And back into the 425 degree oven for an additional 4 to 6 minutes.

Or until the cheese is melted and the garlic toast is cooked how you prefer.

These shrimp pesto garlic bread pizzas certainly bring that WOW factor and don’t look at all like we took some shortcuts from the store!

These kind of reminded me of when I was a kid and my parents would make shrimp scampi thanks to the beautiful garlic flavor and the perfectly seasoned lemon shrimp.

Ingredients

  • 1 8 count package garlic toast/ Texas toast
  • 1 tablespoon olive oil
  • 1 pound shrimp peeled and deveined
  • 1 tablespoon lemon juice
  • Old Bay seasoning, kosher salt, pepper, crushed red pepper flakes
  • 1/2 cup pesto (homemade or store bought)
  • 3 green onions sliced
  • 2 cups shredded mozzarella cheese

Instructions

  1. Place the 8 slices of garlic toast on a lined baking sheet and cook in a 425 degree oven for 5 to 6 minutes.

  2. While the garlic toast is cooking in the oven, set a skillet over medium heat. Add the olive oil and once hot add the shrimp, lemon juice, Old Bay seasoning, kosher salt, pepper, and crushed red pepper flakes. Cook 2 to 3 minutes stirring the few times.

    Note: Old Bay seasoning already contains some salt so not too much kosher salt is needed.

  3. Remove the shrimp from the skillet and let cool slightly, then chop into smaller pieces.

  4. Once the garlic toast comes out of the oven the first time, spread each piece with some pesto then top with the cooked shrimp, sliced green onions, and mozzarella cheese.

  5. Place the lined baking sheet back into the 425 degree oven for an additional 4 to 6 minutes or until the cheese is melted and the garlic toast is cooked how you like.
