Blackstone Lemon Herb Smashed Potatoes

If you’re looking for an easy side recipe for the griddle, I got ya covered with Blackstone Lemon Herb Smashed Potatoes!

Petite golden (or redskin) potatoes get soft on the inside and slightly crisp on the outside.

And the lemon herb garlic butter really brings these taters to Flavortown 🙂

How to make Blackstone Lemon Herb Smashed Potatoes

I am starting with a 1 1/2 pound bag of petite gold potatoes along with butter, lemon, fresh herbs, and fresh garlic.

You can really use any herbs of choice.

I have thyme, rosemary, and basil growing in my garden so that’s what I used.

Fresh dill is another great herb that pairs well with lemon.

Boil the petite potatoes in salted water for 12 minutes.

If you have regular size redskin potatoes, they will need closer to 18 minutes.

While the potatoes boil, make the lemon herb garlic butter.

Just melt 4 tablespoons butter and add lemon juice, the chopped fresh herbs, and minced garlic.

Then preheat the Blackstone griddle or flat top grill to medium heat for a few minutes.

And add cooking oil of choice and the potatoes, spaced out a bit.

Use a burger press to smash them.

If you don’t have a burger press, a sturdy cup (NOT glass) will work too!

Then season with plenty of kosher salt and pepper.

The smashed potatoes will cook on the griddle for 6 to 8 minutes total, flipping halfway through.

If you prefer a crispier potato, you can certainly cook them longer.

Brush them with the lemon herb garlic butter during the last minute or two on the griddle.

Ingredients

  • 1 1/2 pounds petite redskin or gold potatoes
  • 4 tablespoons melted butter
  • 2 tablespoon lemon juice
  • 2 tablespoons fresh chopped herbs of choice (I used thyme, rosemary, and dill)
  • 4 to 5 cloves garlic finely minced
  • cooking oil of choice
  • kosher salt, pepper

Instructions

  1. Fill a saucepan with water, bring to a boil, salt the water with kosher salt and add the potatoes. Boil for 12 minutes (if they are regular size potatoes and not petite, boil for 18 minutes).

  2. Combine the melted butter, lemon juice, fresh herbs, and garlic in a small bowl.

  3. Preheat the griddle to medium heat for several minutes. Spread some cooking oil of choice on the griddle and put the potatoes on the griddle once hot and smash them with a burger press or cup. Season them with kosher salt and pepper.

  4. Cook the potatoes 6 to 8 minutes total, flipping halfway through. Brush the lemon garlic herb butter on the potatoes during the last minute or two.
