Here I am with another week’s worth of recipes to share with you. These are pretty healthy. or as I like to say “healthy-ish” and easy to make. One way I keep my life balanced (or maybe balanced-ish 😉 ) is by only cooking three times during the week and making something a little more involved on the weekend when I have more time.

What does my family eat the rest of the days you may ask? Well, we do order pizza or go out sometimes. We also will have a simple sandwich night other times. But my biggest time saving trick is making more than I know my family will eat on the nights that I do cook. That way we have lots of leftovers. It’s what works for me and gives me some extra time to spend with my family, instead of spending all my time cooking for them.

These taco bowls are not only super healthy, they are also super delicious! If you have kids I would suggest setting out some tortillas or taco shells so they can have regular tacos. It’s all the same ingredients and everyone can be happy at dinner 🙂

These are one of my kids all time favorite meals. Bonus points that they are so easy and ready in no time. They can be breakfast of course, but we love a good breakfast for dinner meal. These are made with ham, but bacon or sausage can certainly be substituted.

Reverse Seared Ribeyes with Garlic Herb Butter

Usually my weekend recipes are fun snacks or appetizers, but since this weekend is Valentine’s Day I am making steak. This reverse seared method is my all time favorite way to make steak.

Beating the crowded restaurants and staying in on Valentine’s Day seemed like much more fun to us. I am serving this steak with Bob Evan’s mashed potatoes so I’m not stuck in the kitchen all night making fancy sides 🙂
