Waffle Breakfast Pizzas
My son suggested waffles from the freezer for dinner, and from there I’m not sure what happened in my thought process…but somehow we ended up with a recipe for Waffle Breakfast Pizzas đŸ™‚
Ever have one of those days that you come home from work exhausted, and the last thing you want to do is make dinner?!
That was me last night.
The plan was to make a decent dinner, but just couldn’t bring myself to do it.
(I mean, it will still be good for me to make tonight so nothing went to waste at least).
They are so fun and for some reason the kids get so excited about having breakfast-for-dinner.
Almost like they are breaking a rule or something.
All it took was ten minutes and our breakfasty dinner was on the table.
How to Make Waffle Breakfast Pizzas
Preheat the oven to 400 degrees and pop your freezer waffles in the toaster.
While those are toasting, make scrambled eggs and set those aside.
I keep bags of diced up ham in the freezer just for occasions like these.
We also use them to make omelettes, top on pizzas, and to put in homemade soup.
I just picked one of the smaller bags of ham and put in the same pan as the eggs to warm it through.
I lined a baking sheet with parchment paper and topped each toasted waffle with the eggs and ham…
…and I let the kids pile on the cheese!

Five minutes in the oven is all it takes for the cheese to melt beautifully!
You can’t have a waffle without syrup, so we drizzled ours on top.
Yes, it was a little sticky but not too bad.
My husband and I added hot sauce to our waffle breakfast pizzas along with our syrup (YUM!)

Waffle Breakfast Pizza
A fun and easy breakfast or breakfast for dinner that the kids will love
Ingredients
- 4 frozen waffles
- 4 eggs
- kosher salt, pepper
- 1/2 Tbsp butter
- 1 cup diced ham (or breakfast meat of choice)
- 1 cup cheese
- maple syrup, hot sauce
Instructions

Toast waffles according to package directions. Preheat oven to 400 degrees.

Beat the eggs in a bowl, add kosher salt and pepper. In a skillet over medium heat melt the butter, add the eggs, and scramble them for about 2 or three minutes until cooked through. Set aside.

In the same pan over medium heat add the ham to heat through, or cook your breakfast meat of choice.

Place the waffles on a baking sheet, top with scrambled eggs, ham, and cheese. Bake for 5 minutes.

Top with maple syrup (and hot sauce if desired)
